Pumpkin Pie Pancakes
August 30, 2015Since I’m shopping for Fall decor already, I figured I might as well start incorporating Fall flavors into my foods! I do love pumpkin stuff, like this pumpkin muffin, pumpkin smoothie, and pumpkin spiced coffee. Today I’m sharing my take on Pumpkin Pie Pancakes- these will change your mornings forever!!
These pumpkin-flavored pancakes are really easy to make- you only need a few ingredients and maybe 10-15 minutes prep time total, so you can easily whip these up on a busy weekday morning or you could save these for a lazy weekend morning. Either way, you need to incorporate these into your morning routine sooner than later! Trust me, you’ll thank me! They are that good!
Pumpkin Pie Pancakes
Ingredients:
1 cup pancake mix
1/2 cup pureed pumpkin from a can
3/4 cup apple juice
1 tsp. vanilla extract
1/2 tsp. cinnamon
1/4 tsp. pumpkin pie spice
pancake syrup, to taste
powdered sugar, for topping
Directions:
1. Combine the pancake mix, pumpkin, juice, vanilla, and spices in a small bowl. Combine until the texture is pourable. If it’s too thick, add more juice. If it’s too thin, add more pancake mix.
2. Heat up a pan, spray some non-stick spray and pour the batter onto the pan. Let cook for several minutes until the edges start to brown. Flip them over.
3. Serve these pancakes piled high with some powdered sugar and syrup on top!
This was one of my favorite breakfasts in quite a while. So festive for Fall, such a strong pumpkin flavor and so quick & easy to prepare!
