Chicken Burrito Bowl {Chipotle Copycat Recipe}

Do you love eating at Chipotle? I sure do, but I have found I can recreate many of the same dishes that I love so much at home. It’s not that difficult to recreate the same, authentic flavor for an easy, delicious weeknight dinner. If you’ve been to Chipotle before – and I’m guessing you have if you’re interested in a Chipotle Copycat Recipe – you will know that the components of a burrito bowl are typically individually scooped onto the plate. This makes prep at home fun and easy too.
The only thing I did to make my version of the Chicken Burrito Bowl a bit easier is not separate out the chicken, rice, corn and beans. I found it easy to just throw all those ingredients into the slow cooker. It’s my little secret shortcut, and it definitely saved me time. Instead of separately cooking the rice & chicken and then heating up the corn & beans, I simply threw them all into the slow cooker. When the time was complete, all the ingredients were cooked, heated throughout and ready to be plated.
I love slow cooker recipes, because they are so simple and convenient. I love throwing a bunch of (sometimes random) ingredients into the slow cooker in the morning and then enjoying a well-rounded, hot dinner in the evening. Easy peasy! So stress-free and simple!
Chicken Burrito Bowl {Chipotle Copycat Recipe}
Ingredients:
- 3 boneless, skinless chicken breasts
- 3 tbsp. homemade taco seasoning
- 2 cups crushed tomatoes
- 1/2 cup chicken broth
- 3 plum tomatoes, chopped
- 2 green peppers, sliced
- 1 medium white onion, sliced thinly
- 2 tbsp. olive oil
- 2.5 cups brown rice
- 1 small can black beans
- 1 small can corn
- 1/2 cup shredded cheese
- 2 limes
Directions:
Into the slow cooker, place the chicken breasts, the taco seasoning, the crushed tomatoes and the chicken broth. Set on high for 4 hours or low for 6 hours.
Meanwhile, in a skillet, heat up the olive oil. Add the sliced green peppers and sliced onions. Saute for 5-10 minutes until the veggies are soft and translucent.
Approximately 30 minutes before the cook time is over, add into the slow cooker the brown rice, beans and corn.
To serve, place the chicken, rice, bean and corn mixture on a plate. Also add the sauteed peppers & onions. Also add some of the chopped tomatoes. Top with the shredded cheese, and squeeze some lime juice on top.
