It’s no secret that I’m a big salad fan in the Summer! This light summer salad with tomatoes, cucumbers, and onion is dressed with a semi-homemade pesto sauce. It’s flavorful, delicious and easy on the waistline – low in fat and low in calories. It’s a perfect start to a meal. Or you could top this salad with some grilled chicken or grilled shrimp and call this salad the main meal!

Light Summer Salad with Pesto Dressing


Ingredients:

  • 1/2 beefsteak tomato, chopped
  • 1/2 white onion, chopped
  • 1 cucumber, chopped
  • store-made pesto sauce
  • 1 tbsp. olive oil
  • 1 tbsp. balsamic vinegar

Directions:

  • Combine the first three ingredients in a bowl.

  • In a separate small bowl, whisk together the last three ingredients until well-mixed.
  • Dressing Mixed

  • Toss the vegetables with the dressing. Let set for 30 minutes for flavors to further combine.
