The lemon poppy seed tomato salad I’m going to share with you all today is the perfect summer salad.

The weather is getting warmer outside. Who wants to slave over a hot stove or oven all day? Not this gal!

I like salads in the Summer. Like a lot! They’re refreshing and delicious and quick to prepare. Don’t forget healthy! You can (almost) always feel proud to be eating a salad. Of course, there are exceptions- some salads are that healthy. But this lemon poppy seed tomato salad is not of those!

The lemon poppy seed tomato salad is indeed quite healthy! Filled with vegetables and a light dressing, this salad is easy on the waistline. Topped with cannellini beans, it’s also high in protein & fiber.

Lemon poppyseed tomato salad recipe

Ingredients:

  • 2 tomatoes, chopped
  • 1 seedless cucumber, chopped
  • 1/2 cup diced parsley
  • 1/4 onion, diced
  • 2 tbsp. Poppy Seed Dressing
  • juice of 1/2 lemon
  • 1/2 cup cannellini beans

Directions:

  • Combine all ingredients in a salad bowl. Toss with the dressing.
  • Let sit for at least 30 minutes for the ingredients to absorb the dressing!

  2. I love how light and healthy this looks! This would be perfect for those hot summer nights when you don’t really want to eat anything too heavy. I am imagining this salad paired with a grilled tuna steak, enjoyed on the porch with a white wine spritzer. Yummy!
