The weather is getting warmer outside. Who wants to slave over a hot stove or oven all day? Not this gal!
I like salads in the Summer. Like a lot! They’re refreshing and delicious and quick to prepare. Don’t forget healthy! You can (almost) always feel proud to be eating a salad. Of course, there are exceptions- some salads are that healthy. But this lemon poppy seed tomato salad is not of those!
The lemon poppy seed tomato salad is indeed quite healthy! Filled with vegetables and a light dressing, this salad is easy on the waistline. Topped with cannellini beans, it’s also high in protein & fiber.
Lemon poppyseed tomato salad: perfect summer salad
- 2 tomatoes, chopped
- 1 seedless cucumber, chopped
- 1/2 cup diced parsley
- 1/4 onion, diced
- 2 tbsp. Poppy Seed Dressing
- juice of 1/2 lemon
- 1/2 cup cannellini beans
- Combine all ingredients in a salad bowl. Toss with the dressing.
- Let sit for at least 30 minutes for the ingredients to absorb the dressing!
