Easy Brownie Recipe {Chocolate + Pineapple}
November 23, 2014This Easy Brownie Recipe is really a brownie / cake hybrid. The texture of the final product is reminiscent of an airy cake (through the center) and of a crispy, chewy brownie (along the edges). Filled with crushed pineapple and marshmallows, this chocolate brownie recipe is really a delicious and satisfying treat perfect for holiday parties – or anytime, really! 🙂
This recipe starts with a brownie mix purchased from the store. Simple & convenient! Now, keep in mind that the box calls for adding an egg and about 1/2 cup oil to the mix. I did neither! 🙂 Rather than adding all the fat & calories from the oil, I added crushed pineapple for some moisture and crunch – I like the tropical flavor of the final product.
By not adding the oil, the final product is not thick and chewy (like most brownies). Rather, it is lighter throughout with an almost-cake-like texture. Keep in mind it does have a lovely brownie texture along the edges!
Let’s get to the recipe now, shall we?
Easy Brownie Recipe {Chocolate Pineapple}
Ingredients:
- Chocolate Brownie mix
- 1 cup crushed pineapple
- 1/2 cup mini marshmallows (plus a few extra for the top)
Directions:
- Preheat oven to 350 degrees F.
- Combine the brownie mix and crushed pineapple in a mixing bowl. The texture will be thick and sticky and gooey.
- Fold in almost all of the marshmallows, setting aside a few.
- Pour the mixture into a greased baking dish. Top with the reserved marshmallows.
- Bake for 11-15 minutes.
- Let cool fully before cutting into it.

Hi Engineer Mom!! Just a couple of questions before I make these delicious brownies. Does the crushed pineapple need to be drained or just scoop out a cup? And it looks like you’ve got these in a 9 x 13 baking dish? Just want to get it right.
