Cilantro Lime Rice {Recipe}
December 3, 2014This recipe for Cilantro Lime Rice is so delicious and easy to prepare, you will be happy to add it to your regular rotation. When we are serving the kids something like chicken nuggets, we always need a good, healthy (at least somewhat healthy) side… and this cilantro lime rice fits the bill perfectly!
Brimming with the bright, tart flavor of lime and the spicy peppery-ness of cilantro, this rice features a plethora of flavors. Also speckled with small pieces of green pepper for added crunch and textural variety, this rice is a definite winner at our house. I hope you try it and like it as much as we do.
This rice has been served many times with Mexican inspired dishes, like this Copycat Version of a Chipotle Chicken Burrito Bowl and even just served alongside basic Slow Cooker Chicken for Tacos. But honestly, this dish would work equally well served alongside any main dish, like this eggplant caponata or a skillet meal of chicken thighs & veggies.

Cilantro Lime Rice {Recipe}
Ingredients:
- 2 cups rice, cooked according to package directions
- 1/2 cup cilantro, chopped
- 2 green pepper, diced
- juice of 1 lime
- 1 tbsp. lime zest
Directions:
Cook the rice according to the package directions.
Add the cilantro, green peppers, lime juice and lime zest to the rice. Continue cooking for another 5 minutes, until all the ingredients are warmed throughout.
Serve warm! Enjoy!
