Easy Lasagna Rollups Recipe
December 30, 2014This recipe for Easy Lasagna Rollups came about one day when I was literally trying to use up some ingredients in the house. And now it has become one of our favorite family recipes. So simple and so delicious, it’s a fabulous weeknight meal when you don’t want to bother working in the kitchen for hours. Stuffed with a mixture of ricotta cheese and sweet peas, and topped with a savory mushroom pasta sauce, these lasagna rollups are a fabulous meal all by themselves. You could serve them with a tossed salad or a cup of soup to round out the meal a bit further.
My kids are very picky eaters, but this recipe is a big hit with them. They love the little rollups and love to eat the stuffing first, and then eat the lasagna noodles last! Kids will be kids, I guess! š
If you don’t like peas, feel free to make this recipe with spinach instead. It’s another fabulous addition to the stuffing portion of this dish. You could also add ground beef or ground turkey to the mixture of the stuffing for a more satisfying dish.
Easy Lasagna Rollups Recipe
Ingredients
- oven-ready lasagna noodles
- 1 cup mushroom flavoredĀ pasta sauce
- 2 cups ricotta cheese
- 1 cup sweet peas
- 1/2 cup shredded mozzarella cheese
- 1/4 cup parmesan cheese
- 2 cloves garlic
- 2 tbsp. olive oil
Directions:
Preheat oven to 350 degrees. Heat up olive oil in a pan. Add the garlic and saute until translucent and soft. Add the peas to the oil. Cook for 5-7 minutes.
Boil water and add the lasagna noodles. Cook according to package directions.
In a small bowl, add the ricotta cheese, peas and parmesan.
Take about 2 tbsp. of the ricotta mixture and roll up the lasagna around it. Place in a baking dish.
Top with pasta sauce and mozzarella cheese. Bake for 30 minutes. Serve warm!
