The holiday season is such a wonderful time of the year. Although I enjoy the busy hustle and bustle of the season, there’s something I enjoy even more. My absolute favorite thing to do is to hang out at home with my family, enjoying yummy treats and doing a fun activity together. We’ve been making handmade ornaments for a few years now, so that’s one tradition that I truly love doing with my family. Another tradition that we all enjoy is making & tasting yummy holiday treats! Since I’ve always been a big fan of Starbucks Coffee, I decided to combine my love for coffee with my love for homemade holiday treats! So today, I’m very excited to share with you all how I made a batch of rich, thick, fudge-y No-Bake Chocolate Coffee Brownies using Starbucks House Blend coffee!
Want a sneak peek at the brownies? Here they are!
No-Bake Coffee Brownies
Making handmade ornaments is something I did as a child with my parents. And it’s totally something I’m continuing with my children. My daughters (a toddler and a preschooler) absolutely love doing arts & crafts with me, and we usually have at least one crafting session per day that involves markers, glue, sequins, glitter, and all the fun stuff that makes their little eyes light up with excitement!
We’ve made a number of different handmade ornaments this year. Of course, I don’t let the kids participate in certain steps, like applying the hot glue. However, the kids definitely love to help me with the kid-safe steps, like sprinkling the glitter or painting! Here are a few of the handmade ornaments we’ve made this year together as a family!
When we’re busy making crafts and enjoying the festivities of the season, we always need a snack! My husband and I have been long-time fans of Starbucks coffee, and since a rich chocolate brownie makes any day extraordinary, I decided to combine my two loves and make a delicious batch of Coffee Brownies. And this recipe is super special, because you don’t even need to turn the oven on! Yes, these no-bake brownies come together in mere minutes and are full of flavor and rich texture!
Here is the recipe for these brownies!
- 1 1/2 cups walnuts
- 1 cup pitted dates
- 1 tsp vanilla
- 1/3 cup cocoa powder
- 1/4 cup chocolate chips
- 1/4 cup strong coffee
- pinch of salt
- 1 cup powdered sugar
- 1 1/2 tbsp strong coffee
- 1. Set aside several walnuts for garnish later.
- 2. Add all the ingredients to a high-powered food processor or blender. Mix until smooth and homogeneous, using a spatula to wipe down the sides of the blender as necessary.
- 3. Pack the mixture into a brownie tray or any rectangular baking dish and place in the refrigerator for a few hours to harden.
- 4. Remove from refrigerator and cut into squares.
- 5. Top with coffee glaze and garnish with the reserved walnuts.
- 1. In a medium mixing bowl, whisk together the sugar and coffee until smooth.
Here are my ingredients for these brownies! I always like to measure out my ingredients at the beginning and place them in little bowls. It makes putting the recipe together so much easier.
When combining the ingredients in the food processor, be sure to use a spatula or spoon to scrape the sides of the food processor bowl so you ensure that the final mixture is smooth!
When placing the mixture into a rectangular dish, use the back of a spoon to pack the brownie mixture down into the dish. Place it into the refrigerator for a few hours to firm up. Remove from refrigerator and cut into squares.
The last step is to lay the brownie squares down on some parchment paper, generously drizzle the coffee glaze on top and garnish with the reserved walnuts!
