Coconut Applesauce Cookies

Filled with (mostly) healthy ingredients, like applesauce and just a sprinkling of shredded coconut, these no-guilt cookies are truly a delight on the tastebuds and the waistline.
I’ve made my fair share of desserts using crushed pineapple, like these and these. Today, I thought I’d try to use applesauce to add moisture to the mix. I love the subtle apple flavor in the final cookies, and I love how much healthier applesauce is, compared to butter or shortening.
Coconut Applesauce Cookies
Ingredients:
- 1/2 cup white cake mix
- 1/2 cup applesauce
- 1/3 cup shredded coconut
Directions:
Preheat oven to 350 degrees.
In a small mixing bowl, combine the cake mix and applesauce. Scoop onto a greased cookie pan.
Sprinkle with the coconut and bake for 15-17 minutes.
Let cool. These cookies are soft and slightly cake-like thanks to the cake mix. They are delicate in flavor and lovely in texture.
