Chocolate Chip Oatmeal Energy Bites
November 27, 2015I love energy bites. Whenever I make a batch at this house (like this popular energy bite variation), the little delicious bite-sized morsels always seem to disappear really quickly. My kids and my husband really love them! And so do I! I always pop a few into a small plastic bag and bring them with me if I know I’ll be running various errands around town. There’s nothing more convenient (and delicious) than being able to pop one of these yummy treats into my mouth when I’m standing in line at the store or waiting for my kid at the preschool pick-up line!
Today, I’m so excited to share with you all a very delicious energy bite recipe! This one features oatmeal and chocolate chips, so it reminds me of the delicious flavors of a chocolate chip cookie. It also gets most of its sweetness and moisture from chopped dates and pureed pumpkin- both of which are relatively healthy! These are very low-guilt snacks!
Chocolate Chip Oatmeal Energy Bites
- 1/4 cup chopped dates
- 1/2 cup pumpkin puree
- 3/4 cup oatmeal
- 1/3 cup chocolate chips
- 1/4 tsp. cinnamon
- Add all ingredients except chocolate chips into food processor.
- Process until smooth.
- Combine the oatmeal mixture and the chocolate chips in a small mixing bowl. Stir to combine.
- Roll into balls.
- Tip: Keep a bowl of water nearby when forming the balls. Wet the hands when rolling the balls- it will prevent the mixture from sticking to your hands!
