Cosmic Chocolate Chip Cookies
December 14, 2014 2 By EngineerMommyI recently had the wonderful opportunity to review a new dessert cookbook, Sweet Debbie’s Organic Treats, and boy, is it fabulous! All the recipes in the cookbook are allergy-free and vegan! Specifically, the recipes are free of gluten, eggs, dairy, soy, sugar and nuts! Pretty impressive, right?
The cookbook is written by Debbie Adler, who is the owner of the famous bakery Sweet Debbie’s Organic Cupcakes in Los Angeles. Even if you don’t live in LA, check out her website, where you can order cupcakes, cookies, brownies and more- all from the comfort of home. Debbie’s goal has always been to teach other moms how to make delicious and nutritious sweets. After her own son was born with food allergies, Debbie was inspired to open a bakery that would serve delicious and decadent desserts that could safely be enjoyed by all children, including those with food allergies. Her cookbook makes it possible and accessible for moms all over the country to bake up these same treats in their own kitchens.
The cookbook is filled with large, beautiful photos of the desserts. Let me just tell you the pictures are truly mouth-watering! I could not decide on which recipe I wanted to try first! The book is neatly organized into nine chapters, which include Power Muffins, Brownie Points, Cupcake Love, Raising the Bar and Our Daily Bread. So regardless of what you’re craving on any given day, you can quickly and easily turn to that section to find the recipe that inspires you!
There is a section at the beginning of the book titled “Recipes within my Recipes.” This section features recipes for making allergy-free items that become ingredients of the larger recipes. For example, you will find recipes for dairy-free chocolate chips and gluten-free all-purpose flour mix. These then become the ingredients that are used in other recipes throughout the book.
I will say that most of the recipes throughout the book have a fairly long list of ingredients. As long as you’re shopping at a large supermarket, you should be able to find all the ingredients required for the recipes. And of course, you could always order pretty much any ingredient online via Amazon. All of the recipes sound intriguingly delicious, such as the one I made today. The Cosmic Chocolate Chip Cookies are spiced ever so slightly with ginger and nutmeg. These are delicious, soft and chewy chocolate chip cookies with a twist! Overall, I would say this cookbook is an essential resource in the kitchen if someone in your family has food allergies – or if you are simply interested in preparing yummy desserts that are healthier and more nutritious! Aren’t we all?

The recipe I decided to try today was the Cosmic Chocolate Chip Cookies!
Ingredients:
- 15×13 inch sheet of parchment paper
- 1.25 cups all purpose gluten free flour
- 3/4 cup amaranth flour
- 1/2 tsp. baking soda
- 1/2 tsp. guar gum
- 1/4 tsp. ginger powder
- 1/4 tsp. fine sea salt
- 1/8 tsp. ground nutmeg
- 1/4 cup coconut oil
- 1/4 cup coconut nectar
- 1 tbsp. vanilla extract
- 1/4 tsp. orange extract
- 1/4 tsp. stevia powder
- 7 tbsp. water
- 3/4 cup chocolate chips
Directions:
Preheat oven to 325 degrees F. Line a cookie sheet with parchment paper.
Whisk together the flours, baking soda, guar gum, ginger, salt and nutmeg.
Microwave the coconut oil and coconut nectar for 20 seconds. Add the vanilla, orange extract and stevia. Pour into the flour mixture.
Add the water and fold in the chocolate chips.
Take about 1.5 tbsp. of the dough, shape into a ball and place on the cookie sheet. Place balls about 2 inches apart.
Bake for 12-13 minutes until they are golden brown. Rotate the cookie sheet after 9 minutes of baking.
Transfer the cookie sheet from oven to a wire rack and let sit for 10 minutes before removing cookies to cool completely.
I can tell you these cookies are just as delicious as typical bakery chocolate chip cookies. They’re soft and chewy and sweet and ever so slightly spicy (thanks to the ginger and nutmeg). And if you or a family member has food allergies, these cookies are a must-try!
