3 Fast Lunch Ideas You Can Make in Under 3 Minutes
October 8, 2011When you have a baby in the house (particularly if she is a teething baby), you don’t have a lot of time to make lunch. But you still need to eat something well-rounded and nutritious. Here are three ideas that I incorporate into my regular menu to make eating with baby a bit easier. These ideas literally take me under 3 minutes to put together.
Rosemary Tuna Salad
Open a can of tuna and place in a bowl. Add 1 tbsp of light mayo and 3 tbsp of fresh lemon juice (I like my tuna salad extra citrus-y; you may prefer 1 or 2 tbsp of lemon juice.). Add some capers, jarred artichokes, and roasted red peppers. Top with a pinch of dried rosemary. Serve immediately with whole wheat crackers. Simple and nutritious!
Meatball Soup
Ok, this one is a bit of a cheat. Start with a can of Campbell’s Italian Wedding Soup and microwave it for 90 minutes. Top with chopped Italian parsley, a dollop of low-fat sour cream, and a handful of croutons. By adding the parsley, sour cream, and croutons, I find that the finished product tasts so much more homemade!
Chipotle Chicken Sandwich
This one is so easy and so tasty. Start with a rotisserie chicken from the supermarket and break off large pieces of white meat. Spread a little chipotle mayo dressing (found in the mayo aisle at my supermarket) on both sides of a whole-wheat roll. Place the chicken on top, and add a slice of provolone cheese. Fast and delicious!
