Caramelized peach and blue cheese salad with shrimp
June 23, 2014Today I’m happy to share with you a recipe for a lovely summer salad – caramelized peach and blue cheese salad with shrimp. It’s a refreshing, delicious and healthy Summer Salad that is perfect for those evenings when you just don’t want to put the oven on! This salad was inspired by the “Caramelized Peach Salad” at California Pizza Kitchen, but it has a few modifications for my taste!
I love salads in the Summer. I recently posted my Lemon poppy seed tomato salad and it was a huge hit – both in our household and on the blog… a bunch of link backs and positive comments! I love when that happens!
I’m pretty sure this salad with caramelized peach (soft, sweet fruit) and blue cheese (tart, salty cheese) topped with shrimp has the perfect balance of elements to make it a real winner! You really should try this one this Summer!
Caramelized peach and blue cheese salad with shrimp
Ingredients:
- handful of lettuce (I used artisan lettuce which includes a few different varieties of lettuces)
- 1/2 white onion, chopped
- 5 peach slices (I used a jar, but you could certainly use fresh peaches)
- 1/4 dried cranberries
- 1/4 cup crumbled blue cheese
- 2 tbsp. pecan halves
- 1 tbsp. butter
- oil & vinegar
Steps:
- Fry the peach slices in the butter until they get caramelized (a few minutes).
- Throw all the ingredients in a salad bowl.
- Top with oil & vinegar!
This salad is so easy to pull together and really makes a gourmet-tasting salad! It was inspired by a similar salad at California Pizza Kitchen – the Caramelized Peach Salad. Their version has Gorgonzola cheese, while I prefer blue cheese. I also opted to top my salad with some shrimp for added protein and fullness factor!
