Mini Shepherd’s Pies

For my family, weekday dinners must always be three things: easy, quick and delicious! These Mini Shepherd’s Pies fit the bill on all three counts, since they are made with Idahoan® Mashed Potatoes. These potatoes are super simple to prepare – just heat and eat. That’s the type of convenience that this mom & businesswoman can appreciate!

Since Idahoan Mashed Potatoes are made with real potatoes, I can feel good about enjoying them. These mashed potatoes are not only the perfect filling for these Mini Meat & Potato Cups, but they are also an easy side dish to go along with anything else on your plate. Even though these mashed potatoes can be prepared in mere minutes, they still provide an authentic, homemade taste… on demand! During the colder months of the year, comfort food is  essential… and it doesn’t get more comforting than this.

To prepare these Mini Shepherd’s Pies, start by cutting phyllo dough into small circles (use a cookie cutter for even circles). Then tuck them into the spots of a mini muffin tray. Bake at 350 degrees for about ten minutes.

Meanwhile, let’s prepare the mashed potatoes. All I needed to do was boil a few cups of water on the stove and then pour Idahoan Mashed Potatoes inside. This product delivers real potatoes, real easy!  In fact, they’ve earned the title of “America’s Favorite Mashed Potatoes” thanks to their superior taste and texture. 

Quickly stir the mixture with a fork to incorporate the product into the water. The result? Perfect mashed potatoes…every single time! And so easy, too!

The final step before assembling the meat & potato cups is to prepare the ground beef mixture. Simply brown some ground beef over medium-high heat and add some mixed veggies (peas & carrots, for example). 

Now it’s time for the best part: the assembly! Start by adding the beef & veggie mixture into the bottom of the phyllo cups.

Next add a generous dollop of the mashed potatoes. 

I also topped with a bit of shredded cheese and put them under the broiler for a few minutes to add a little color to the tops. Sprinkle some chopped herbs (chives & parsley) and these babies are all done!

How delicious do they look?!

These are everything I love about a Shepherd’s Pie, but in miniature form. And isn’t miniature always more fun?! 

These would be a hit at parties too, because guests can simply grab one as an appetizer or side dish. The flavor of Idahoan Mashed Potatoes really comes through strong!

For a weeknight dinner, we love to enjoy these little Mini Shepherd’s Pies with a generous helping of mashed potatoes. It’s such a hearty, comforting meal that’s perfect for cold winter days!
