Almond Flour Sugar Cookies (Low Carb)

Growing up, making cookies from scratch was always the best way to spend time in the kitchen. I mean, is there anything better than whipping together a delicious batter, rolling out the dough and then baking to perfection? The smell of cookies baking in the oven is perhaps the best smell in the world. If they could bottle that up, I swear I would spray it in my kitchen every day. Anyone else?
Anyway, today’s recipe for almond flour sugar cookies reminds me another delicious memory from my childhood: little fruit-shaped marzipan treats from the Italian bakery. My parents used to get me these small marzipan treats made out of marzipan (almond paste). They were adorable and delicious! Today’s cookies definitely remind me of the delicate almond taste of those treats.
Let’s get right to the recipe now, shall we?
- 1 cup almond flour
- 1 egg
- 1 teaspoon almond extract
- 2 tablespoons raw honey
- 1. Combine all ingredients in a food processor.
- 2. Take a teasponful of batter and roll into a ball. Press the ball flat on a baking mat on a baking tray.
- 3. Bake at 350 degrees for 15-18 minutes, or until cookies start to brown on edges.
Keep in mind that these cookies aren’t terribly sweet. I like them that way. However, if you prefer your cookies on the sweeter side, you may want to add another tbsp or two of honey. That should do the trick.
I love the delicate texture of these cookies. You wouldn’t even be able to guess that these babies have no flour in them!
