These almond flour sugar cookies are low in carbs and gluten-free. Perfect for those with food allergies or those looking for a reduced calorie recipe to satisfy that sweet tooth, these sugar cookies are guaranteed to be a hit at your next party.

Growing up, making cookies from scratch was always the best way to spend time in the kitchen. I mean, is there anything better than whipping together a delicious batter, rolling out the dough and then baking to perfection? The smell of cookies baking in the oven is perhaps the best smell in the world. If they could bottle that up, I swear I would spray it in my kitchen every day. Anyone else?

Anyway, today’s recipe for almond flour sugar cookies reminds me another delicious memory from my childhood: little fruit-shaped marzipan treats from the Italian bakery. My parents used to get me these small marzipan treats made out of marzipan (almond paste). They were adorable and delicious! Today’s cookies definitely remind me of the delicate almond taste of those treats.

Ingredients
  1. 1 cup almond flour
  2. 1 egg
  3. 1 teaspoon almond extract
  4. 2 tablespoons raw honey
Instructions
  1. 1. Combine all ingredients in a food processor.
  2. 2. Take a teasponful of batter and roll into a ball. Press the ball flat on a baking mat on a baking tray.
  3. 3. Bake at 350 degrees for 15-18 minutes, or until cookies start to brown on edges.

Keep in mind that these cookies aren’t terribly sweet. I like them that way. However, if you prefer your cookies on the sweeter side, you may want to add another tbsp or two of honey. That should do the trick.
