Grilled Lemon Chicken Kabobs
August 25, 2015These Grilled Lemon Chicken Kabobs are a fabulous way to enjoy chicken! They’re flavorful, moist, healthy & totally satisfying. Oh and by broiling them in the oven, they take very little time to prepare, and can be made in big batches & stored in the refrigerator for a few days. Then you can simply take out one or two skewers throughout the week to enjoy a lovely chicken dish with almost no added prep time!
Rich in a lovely lemon flavor, this dish pairs well with almost any side dish. These Lemon Chicken Kabobs would be delicious with a side of vegetables, rice, pasta or alone on top of a salad.
Let’s get to the recipe, shall we?
Grilled Lemon Chicken Kabobs
Ingredients:
3 chicken breasts
3 tbsp. olive oil
juice of 2 lemons
2 tbsp. lemon zest
salt & pepper, to taste
Directions:
1. Cut the chicken into bite-sized pieces.
2. Thread the chicken cubes onto metal skewers.
3. In a small bowl, combine the olive oil, lemon juice, lemon zest, salt & pepper. Brush this onto the chicken cubes. Broil the kabobs on high in a medium baking dish, turning often to achieve a nice browned color on all side. Ensure that the chicken is fully cooked on the inside.
Serve warm and garnish with lemon!
