  • Preheat oven to 375F.
  • Cut the zucchini lengthwise. Using a spoon, scoop out the flesh from the interior of the vegetable.

  • Set aside the flesh of the zucchini.

  • Add the zucchini flesh to the stuffing.

  • Then, using a spoon, fill the zucchini cavities with the mixture of stuffing and zucchini flesh.
  • Pour the olive oil over the top of the veggies.

  • Bake for 35 minutes, until the stuffing is nicely browned. Serve warm.
