Stuffed Zucchini {Recipe}

Stuffed Zucchini {Recipe}
Ingredients:
- 4 zucchini
- breadcrumb stuffing, same as used in this recipe
- 2 tbsp. olive oil
Directions:
- Preheat oven to 375F.
- Cut the zucchini lengthwise. Using a spoon, scoop out the flesh from the interior of the vegetable.
- Set aside the flesh of the zucchini.
- Add the zucchini flesh to the stuffing.
- Then, using a spoon, fill the zucchini cavities with the mixture of stuffing and zucchini flesh.
- Pour the olive oil over the top of the veggies.
- Bake for 35 minutes, until the stuffing is nicely browned. Serve warm.
