This morning I had such a lovely breakfast that was colorful (good sign of healthful, nutritious components) and full of veggies! It was so easy to make and was a wonderful way to start my day. It’s amazing how great it feels to start the day on a healthy note. When your first meal of the day is low in fat and calories, you tend to be more health-conscious for the rest of the day, as well. It’s a lovely phenomenon.
So I wanted to share with you my breakfast so you can maybe try a similar breakfast for yourself as well, if you feel so inclined. I promise it kept me feeling satisfied for a few hours and really got my day off to a fabulous start.
Here it is…
Healthy hard-boiled egg breakfast
So, as you can see, I had two hardboiled eggs, but I only had one yolk. I sprinkled salt and pepper over the eggs. I always tend to discard one egg yolk (too much fat). I also had 1/4 cup of low-fat shredded cheese for calcium and protein. Pssst- I like to pour small amounts of the shredded cheese into the little cups that form when you hard-boil an egg and then discard the yolk. Then, I have these cute little egg cups filled with shredded cheese. Also, I cut up half of a large cucumber and a small plum tomato. I drizzled them both with a bit of extra-virgin olive oil and sprinkled salt & pepper on top! Of course, I had my usual cup of decaf Starbucks coffee with milk and vanilla syrup.
In all honesty, this breakfast didn’t hold me over until lunchtime. Which is fine. Many smaller meals is a better way to go through the day than having fewer bigger meals. Around 10am, I had one slice of whole wheat bread toasted and smeared with almond butter & grape jelly. Yum!
