Cinnamon Swirl Raspberry Cookie Bites

December 19, 2014 0 By EngineerMommy

This recipe for Cinnamon & Raspberry Cookie Bites is so delicious and easy to make! I love recipes that have only a small handful of ingredients, because these recipes usually take less time to whip together. This recipe here today only has FOUR ingredients, so it’s really a breeze to prepare.

Oh and this recipe is so super healthy! Instead of butter or margarine or oil for moisture, I instead use… (wait for it)… VANILLA YOGURT! It imparts a lovely vanilla flavor and plenty of moisture. And it doesn’t carry with it the fat and calories of other typical ingredients of baked goods!

And it’s such a delicious, lovely dessert. Soft, moist cookies brimming with the flavor of cinnamon swirl bread are used to sandwich the soft, sweet raspberry preserves. These cookies have crispy exteriors and soft, tender interiors.

After the cookies come out of the oven, let them cool for 10-15 minutes. Then, place about 1 tbsp. of raspberry preserves onto the flat side of a cookie. Take another cookie and create a little sandwich cookie bite.
