Cinnamon Swirl Raspberry Cookie Bites

I love recipes that have only a small handful of ingredients, because these recipes usually take less time to whip together. This recipe here today only has FOUR ingredients, so it’s really a breeze to prepare.
Oh and this recipe is so super healthy! Instead of butter or margarine or oil for moisture, I instead use… (wait for it)… VANILLA YOGURT! It imparts a lovely vanilla flavor and plenty of moisture. And it doesn’t carry with it the fat and calories of other typical ingredients of baked goods!
And it’s such a delicious, lovely dessert. Soft, moist cookies brimming with the flavor of cinnamon swirl bread are used to sandwich the soft, sweet raspberry preserves. These cookies have crispy exteriors and soft, tender interiors.
Cinnamon Swirl Raspberry Cookie Bites
Ingredients:
- 1/2 cup cinnamon swirl bread mix
- 2 tbsp. water
- 2 tbsp. vanilla yogurt
- 1 cup raspberry preserves
- Optional: cinnamon
Directions:
Preheat oven to 350 degrees F.
In a small mixing bowl, combine the bread mix, water and yogurt. Combine thoroughly with a whisk.
Place about 1.5 tbsp. of the batter onto a greased baking dish. Optional: Top with a dash of cinnamon.
Bake for about 18 minutes, until the tops begin to turn golden brown.
After the cookies come out of the oven, let them cool for 10-15 minutes. Then, place about 1 tbsp. of raspberry preserves onto the flat side of a cookie. Take another cookie and create a little sandwich cookie bite.
Repeat until you’ve formed little sandwiches with all of the cookies.
