Ok, this idea has been floating around Pinterest for the longest time. Just simply take a box of white cake mix and combine that with a small can of pumpkin puree, put the batter into muffin tins, and half an hour later you have a pretty tasty and simple pumpkin muffin. I thought it sounded too good to be true. But no, these muffins are the real deal. Ok, they don’t have that crumbly texture that you get by adding a ton of butter and oil and eggs and so on. But they have a genuine pumpkin flavor, a respectable texture, and are a cinch to whip together.

  • 12 ounce can of pumpkin puree
  • 1 box of white cake mix
  1. Combine the pumpkin puree and the white cake mix until smooth. Do not overmix.
  2. Pour into a greased muffin tray and bake for 30-40 minutes, until a toothpick inserted into the center of the muffin comes out clean.
  3. Serve warm.
