During the balmy days of summer, there’s nothing better than conveniently throwing a bunch of ingredients together in a bowl for a quick meal. Today, I’m sharing the recipe for a Grilled Shrimp & Hearts of Palm Salad, featuring Reese Hearts of Palm.

Grilled Shrimp & Hearts of Palm Salad

Gather Reese Hearts of Palm and Reese Marinated Artichokes. I really love the crunch & texture of the hearts of palm – I’m always adding them to my salads!
Grill the shrimp over medium heat in some olive oil for about 5-7 minutes until they develop a bit of color.
Now it’s time to assemble the salad. Place all the ingredients in a large bowl. I love the bright colors and vibrant flavors of this dish. For the salad dressing, I simply combined some olive oil, balsamic vinegar and crushed garlic together. Easy & flavorful!
This salad dish is totally a hit with my family during the summertime … and throughout the year for that matter. A satisfying, delicious salad is always a win with me!

- Reese Hearts of Palm
- Reese Marinated Artichokes
- 1 head of romaine lettuce
- 1/2 red onion, sliced
- 1 seedless cucumber, sliced
- 1 cup cherry tomatoes, sliced
- 10 shrimp
- 1 tablespoon olive oil
- 1. Start by chopping up the romaine lettuce and slicing the red onion, cucumbers & cherry tomatoes.
