When the temps heat up, I don’t like to spend hours and hours in the kitchen, working on complicated recipes and heating up the whole house! I like recipes that are big on flavor but are easy to whip together! Today’s recipe for Simply Grilled Balsamic Zucchini is one such recipe! It’s quick, simple and very delicious!
It’s a perfect side dish to be served alongside all the Summer BBQ mains. It goes wonderfully with fish, chicken and beef. Of course, these balsamic-flavored zucchini slices are fabulous on a sandwich with some fresh mozzarella slices, as well. You could even top a light romaine salad with strips of these grilled zucchini slices- healthy and tasty!
Here is how this recipe is put together!
Simply grilled balsamic zucchini
3 zucchini, sliced lengthwise
3 tbsp. balsamic vinaigrette (I used a store-bought balsamic vinaigrette salad dressing, but you could combine balsamic vinegar and oil & use that instead, if you prefer.)
1 tbsp. olive oil
salt & pepper, to taste
1. Heat up the olive oil on a grill pan.
2. Add the zucchini slices. Season with salt and pepper.
3. Continue to cook for several minutes on each side, ensuring grill marks are formed on each side. Drizzle the balsamic vinaigrette dressing on top of the zucchini as it cooks.
4. Once softened, remove the zucchini from the stove. Drizzle a little more vinaigrette. Serve warm!
