And these sweet lil babies are actually so simple to make… Will you believe there are only THREE ingredients in this recipe? Yes, only three ingredients are required to whip together these yummy cookies! Oh and they only require 12-15 minutes in the oven, so you could be biting into one of these sweet, soft, chewy chocolate muffin cookies in no time! Now, that’s something to get excited about, if you ask me!
I’m always inventing recipes based on what we have in the pantry. One day I had a box of Chocolate Muffin mix. So I knew I would be making some sort of chocolate dessert recipe. And I always look for ways to make things healthier… and often in unexpected ways. Guess what else I put into this recipe? Nonfat vanilla yogurt. Yes, it adds a mild vanilla flavor and some moisture and is generally healthier than some other typical sources of moisture, such as butter or shortening.
Chocolate Muffin Cookies
- 1/2 cup chocolate muffin mix (mine had chocolate chips mixed in)
- 1 tbsp. vegetable oil
- 1.5 tbsp. vanilla yogurt
Preheat oven to 350 degrees F. Gather your ingredients. In a mixing bowl, combine all ingredients. If your mix doesn’t already have chocolate chips mixed in, feel free to add 1/4 cup of chocolate chips.
Scoop about 1 tsp. of the mix onto a greased baking dish.
Bake for 12-15 minutes, until a toothpick inserted into the center comes out clean.
