Aren’t Chicken Kabobs so much fun? Pieces of bite-sized chicken, char-grilled to perfection, sitting on a skewer with a few other veggies, which have also been char-grilled to perfection. It’s a delicious meal and it’s surprisingly easy to make at home. You might think making chicken kabobs at home is either time-intensive or difficult without commercial-grade equipment. But not so, my friends – not so at all!

I have found a method of reproducing that same delicious char-grilled flavor of chicken and veggies, and all that’s required is your broiler at home! Perfecto! :)

In order for your chicken not to get dried out, I also recommend marinating them for a bit beforehand. The longer, the better. But truth be told, I only marinated mine for about 20 minutes, and they were fabulous!

Chicken Kabobs Recipe

Ingredients:

  • 3 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp. olive oil
  • juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • 2 green peppers, cut into bite-size pieces
  • 1 red onion, cut into bite-sized pieces

Directions:

  1. To make the marinade, combine the oil, lemon juice, garlic and spices in a small bowl. Add the cubed chicken. Let sit for 20 minutes – the longer, the better!

  3. Preheat the broiler to HIGH.
  4. Thread the chicken, onion and peppers onto the skewers. (I used metal skewers, but if you’re using wooden ones, be sure to soak them in water for 30 minutes beforehand to prevent burning them!)

  6. Place the skewers under the broiler for 5-7 minutes, until they start to form char marks. Turn them and leave them for another 5-7 minutes. Keep turning the skewers every 5 minutes. Make sure chicken is cooked to an internal temperature of 165 degrees F.

  8. Serve warm over a bed of rice.
