I know it has been a bit quiet on the blog front the last several days. We just came back from a short vacation to central PA… Dutch country, to be exact. It was so nice to get out of town and step away from the everyday grind for a bit.

1. I am obsessed with cookie dough!
Well, this wasn’t too much of a surprise. I guess I didn’t know just how much I love cookie dough. We actually visited this spot in Lancaster, where you could try different flavors of edible cookie dough. All of the options are gluten-free and they have a few varieties that are also vegan. We tried birthday cake, chocolate chip, and s’mores. All were tasty. And now I am on the hunt for homemade recipes so I can replicate the taste, texture & flavor of the cookie dough. My eyes are fixated on this one and this one.

2. I am a bit scared of elevators!
I grew up in NYC and always thought I was very comfortable with elevators in tall apartment buildings. Well, on vacation, we got stuck in the hotel elevator in the evening when we were on the way back to our room. We were only stuck for about 15-20 minutes, but I was pretty freaked out. So were the kids. Luckily, the hubby was cool, calm and collected. However, now I kinda have a thing with elevators! Ugh!

3. I actually like country music!
Growing up in a big city, I always sorta gravitated toward pop & hip hop. I never really gave country music a chance. However, on vacation, we listened to a bunch of country music stations and now I am in love with the genre. One of my favorite songs is “Most People Are Good”. Seriously, listen to the lyrics – they’re beautiful!

I even found a country music station here in central NJ and I’m totally listening to it now! Ha!

4. I left my heart in Pennsylvania!
Ok, that’s a strange headline… I admit it. Here’s the thing though. When we got home, I kept telling my husband that I missed Pennsylvania and really wanted to go back. He sorta joked, “you left your heart in Pennsylvania”. The truth is that my family has always loved vacationing in Pennsylvania. The last few years, my husband and I have been discussing the possibility of moving to PA one day. We really like the slower pace of life and the vast stretches of farmland. It’s so peaceful. The cost of living is low. I realize these statements only apply to certain areas of the state. Do any of you live in PA? Tell me about it.

5. Entrepreneurship means I am never fully on vacation!
During vacation, I brought my computer along. I had to… I had a sponsored blog post that had to go live on Day 2 of our vacation. Of course I had the post written before we left for vacation but I still needed to promote the post on social media and then submit all the links to the network. Being an entrepreneur means that although I was on vacation, I still needed to sit at the desk in the hotel room to take care of unfinished blog business in the evenings. It meant I needed to answer business emails during the day. It meant I needed to respond to social media & blog comments throughout the week. I love being an entrepreneur – and the freedom it provides… but it’s definitely challenging at times to find a good work-life balance.

While spring break was enjoyable, I am ready to get back to the everyday routine. I am ready for the kids to go back to school. I am ready to get back to a frequent posting schedule. I am ready to tackle the myriad of home renovation projects on our ever-present to-do list.

Spring break was a lot of fun and I learned a lot during the week. Do any of you live in Pennsylvania? Do you like it? Did you learn anything interesting about yourself during spring break?
