When it comes to my list of morning essentials, coffee ranks pretty high! In fact, once I get out of bed, I typically head right to the kitchen and prepare myself some coffee. Sometimes I prefer an iced cold-brew coffee, sometimes I prefer a nice hot mug of coffee, and sometimes I prefer a coffee smoothie! Regardless of how I prepare it, recently I have really been enjoying Dunkin’ Donuts French Vanilla coffee paired with International Delight Simply Pure Caramel coffee creamer. Today, I will sharing the recipe for a delicious, decadent beverage: a Chocolate, Coffee & Chia Seed Parfait! Perfect as a breakfast drink or a treat any time of the day, this parfait is guaranteed to put a smile on your face!
As an on-the-go entrepreneur and busy mom of two young kids, my days are generally quite busy. I find that my mornings (as long as I wake up early enough) are some of the quietest, slowest periods of the day. I really enjoy getting up 30 minutes before everyone else in the morning and having some time for myself. I usually like to look at my calendar during this time and create my daily to-do list. After going over my tasks for the day, I typically like to squeeze in a short 20 minute workout in the morning to jump-start my metabolism for the day. Chocolate, Coffee & Chia Seed Parfait

Now, let’s get to the recipe. First, let’s start by gathering our ingredients for the bottom layer of the parfait: the chocolate chia seed pudding. Gather chia seeds, cocoa powder, vanilla extract and milk. For the exact quantities of ingredients, look for the recipe card toward the end of this post.
To prepare the chia seed pudding, simply place the chia seeds, cocoa powder, vanilla extract and milk inside a glass. Whisk together until uniform and place in the refrigerator to chill overnight. When it comes out of the fridge, the chia seeds will have absorbed the liquid and the mixture will be gelatinous.
*Tip: If you’re in a rush, you can totally let this sit in the fridge for just a few hours- the final texture may be a bit runnier, though.
The chia seed pudding will be the first layer of this parfait. The next layer will be some delicious coffee: Dunkin’ Donuts French Vanilla coffee topped with International Delight Simply Pure Caramel coffee creamer. By the way, notice how I set up this coffee station in my kitchen. It holds all my essentials for making a delicious cup of coffee in one spot: coffee, sweetener, cocoa powder, cinnamon and more. I put the cocoa powder and cinnamon inside glass salt & pepper jars. I also added a cute coffee-inspired canvas to this corner of my kitchen!
I brewed Dunkin’ Donuts French Vanilla coffee and I love the fact that every cup is consistently delicious (whether I’m picking up the coffee from the store or making it at home from ground beans). Keep an eye out for all the different flavors available, including Original, French Vanilla, Hazelnut, Blueberry Muffin, Jelly Donut, Vanilla Cupcake and more!
*TIP: For the best coffee flavor, use cold, filtered water in a clean coffeemaker. Aim for one full tablespoon of ground coffee per 6 ounces of water- add more or less depending on your desired strength.
Dunkin’ Donuts coffee is rich & smooth and it’s just awesome everyday coffee. To add a delicious caramel flavor, I poured in some International Delight Simply Pure Caramel coffee creamer. This wonderfully delicious creamer is really perfect for consumers who enjoy an awesome coffee experience, and it’s definitely one of my must-haves for my morning coffee! I love the beautiful swirls of color that this coffee creamer adds to my drink. Simply Pure creamers are made with real milk, cream and sugar. They are simply delicious!
Now, it’s time to set up the parfaits. Gather three tall clear glasses. Fill the bottom third with the chia seed pudding.
Add the coffee layer next.
Finally, place a dollop of frozen whipped topping over the coffee layer.
Sprinkle a dash of cocoa powder on top.
As an optional garnish, you may also add some slivered almonds and chocolate-flavored coconut chips. I’m absolutely in love with the crunch that these add to the parfait!
On a dreary morning, getting out of bed is easy when you can start your day with one of these babies, am I right?
One of these parfaits is ideal as a decadent snack or a part of a nutritious breakfast. The combination of sweet french vanilla coffee, tasty chocolate chia seed pudding and creamy whipped topping is pure perfection!

- 1 tablespoon Dunkin’ Donuts French Vanilla ground coffee
- 1 tablespoon International Delight Simply Pure Caramel coffee creamer
- 2 tablespoons chia seeds
- 5 ounces milk
- 2 teaspoons cocoa powder
- 1 teaspoon vanilla extract
- 1/3 cup frozen whipped topping
- cocoa powder, for sprinkling
- slivered almonds, for garnishing (optional)
- chocolate coconut chips, for garnishing (optional)
- 1. To prepare the chia seed layer, combine the chia seeds, milk, cocoa powder and vanilla extract. Store in refrigerator overnight.
- 2. To prepare the coffee layer, brew the coffee and top with the creamer.
- 3. Fill a tall, clear glass with the chia seed pudding (after it has set in the refrigerator).
- 4. Pour the coffee with creamer on top.
- 5. Place a dollop of frozen whipped topping over the coffee layer.
- 6. Top with cocoa powder.
- 7. Add a few slivered almonds & coconut chips on top for decoration. (optional)

Nothing can get better than this! OMG. I love everything you put in there. The chia seeds for the healthy benefits, the coffee plus Simply Pure creamer for that energy kick, and finishing off with slivered almonds and frozen whipped topping! Yum.
