The Softest Almond Flour Sugar Cookies

Ok, so this is not my first attempt at using almond flour in baked goods. In fact, I’ve made these lemon bars, this focaccia bread and even these sugar cookies using almond flour in the past. However, today’s recipe is probably the tastiest sugar cookies I’ve ever made because they are super soft & moist on the inside.

Now the best part of these cookies is that they are delicious all on their own. BUT if you want to dress them up with a buttercream frosting or some melted chocolate & sprinkles, then they become that much more irresistible. 

And the texture of these cookies… soft, chewy and flavorful! Such a perfect balance! 

So how do you make these? Here are the ingredients you’ll need:

  • 1.5 cups almond flour
  • 1/3 cup melted butter
  • 2 tbsp coconut sugar
  • 1 tbsp stevia
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1.5 tbsp coconut flour
  • 1/4 tsp baking soda

Preheat the oven to 350 degrees F. Mix all the ingredients in a food processor, starting with wet ingredients and then adding the dry ingredients. After dough forms, allow to sit for 10 minutes. Scoop tablespoonfuls of the batter onto a lined baking sheet.

Bake for 10 minutes. Allow to cool before handling.
