Pomegranate 7UP Cupcakes

Cupcakes are definitely my favorite type of dessert. Who doesn’t love a delicious cupcake? The light, fluffy base of the cupcake is the perfect complement to the rich, sweet frosting on top. To be honest, I never met a cupcake I didn’t love! Today, I’m sharing the recipe for a cupcake I recently created: Pomegranate 7UP Cupcakes. These delicious, easy-to-prepare cupcakes are flavored with the classic lemon lime flavor of 7UP and the sweet, tart flavor of pomegranate juice.
Last week, during my weekly trip to Stop & Stop, I picked up some 7UP bottles. We love that iconic lemon lime flavor of this soda. I also appreciate that it’s completely caffeine-free, so I can enjoy this delicious soda in the evening without worry. In addition to drinking 7UP in a glass, I’ve been really enjoying getting creative with 7UP in recipes. There are so many recipe ideas out there that use 7UP as an ingredient. Today’s cupcake recipe features light, airy cupcakes flavored with 7UP soda and pomegranate juice. These cupcakes are topped with a rich, sweet frosting that’s tinted a pale pink thanks to the pomegranate juice. By adding a few pomegranate seeds on top of the frosting, you can enjoy a fun, delicious burst of tart pomegranate flavor with each bite! Take a look at these gorgeous cupcakes!
Pomegranate 7UP Cupcakes

- 1.5 cups flour
- 1/2 cup 7UP
- 2 tbsp pomegranate juice
- 1/2 tsp baking soda
- 1/8 tsp baking powder
- 1/4 cup vegetable oil
- 3/5 cup sugar
- 1 egg
- 1/2 tsp vanilla
- 8 oz frozen whipped topping
- 3 tbsp 7UP
- 3 tbsp pomegranate juice
- Optional: pomegranate seeds, for garnish
- 1. Preheat oven to 350 degrees F.
- 2. Combine the flour, baking soda, baking powder and sugar.
- 3. In a separate mixing bowl, combine 7UP, pomegranate juice, vegetable oil, egg and vanilla.
- 4. Add the wet ingredients to the dry ingredients. Whisk to combine fully.
- 5. Pour into a muffin/cupcake tray, filling about 2/3 full.
- 6. Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.
- 1. Combine the whipped topping, 7UP and pomegranate juice with a whisk until smooth and even in color.
- 2. Using a plastic bag, pipe the frosting onto the cupcakes.
- 3. Optional: Garnish with a handful of pomegranate seeds.
I like to pre-measure the ingredients I will use for the recipe. It makes recipe prep quick & easy. We love the great taste & versatility of 7UP. It really makes the perfect base for these cupcakes!
When combining the dry ingredients for this recipe, be sure to use a whisk to mix the ingredients fully.
When adding the wet ingredients to the dry ingredients, be sure to add the wet ingredients slowly to avoid any clumps in the final mixture. The consistency of the batter should look like a thin oatmeal.
To prepare the cupcake tray, either grease the tray with butter or use cupcake liners. Fill each cupcake mold about 2/3 full, leaving enough room for the cupcakes to expand as they cook.
To prepare the pomegranate frosting, simply combine 7UP, pomegranate juice and frozen whipped topping in a mixing bowl. Combine until the mixture is a very pale pink.
To top the cupcakes with this frosting, I like to fill a zippered plastic bag with this frosting. Then, use a pair of scissors to cut a small slit in the bottom of the bag.
*TIP: To make filling this plastic bag easy & quick, use a tall glass to support the bag while filling.
After taking the cupcakes out of the oven, be sure to let them cool fully. If hot cupcakes are frosted, the frosting will melt and start dripping down.
Once the cupcakes are fully cooled, use the plastic bag to pipe the frosting onto the cupcake. Also, add some pomegranate seeds for garnish! How delicious do these look?
I absolutely love the way these came out. They’re totally fun & festive for a special event, birthday, occasion, etc, but they’re easy enough to make for everyday celebrations, too.
