Chocolate Cookie Balls
The star of this recipe is Keebler Fudge Stripes Original cookies. These delicious chocolate cookies add a tasty, chocolate-y touch to the cookie balls. Plus, the Kellogg’s Original Rice Krispies Cereal adds a scrumptious, crunchy texture to the final product.
I picked up all my ingredients for this recipe from Target, including the semi-sweet chocolate chips and low-fat cream cheese. These Market Pantry brand items are such a great everyday deal at Target.
The first step is to place about ten cookies into the food processor. Pulse until a fine ground texture is achieved. For the full detailed recipe, scroll down to the recipe card.
Add 2 ounces of cream cheese to the food processor and pulse until the mixture comes together and is homogeneous.
Take teaspoonfuls of the batter and roll between your hands until smooth, uniform balls are formed.
Meanwhile, melt the chocolate chips in the microwave.
Pour the Kellogg’s Original Rice Krispies Cereal into another small bowl. Now it’s time to decorate the cookie balls.
Dip the chocolate balls first into the melted chocolate and then into the cereal. Place the balls in the freezer to firm up for a bit.
The balance of textures in these cookie balls is absolutely perfect… the creamy texture of the cream cheese, the rich taste of the chocolate, the crunch of the cereal coating all complement each other so nicely.
Each bite is truly scrumptious!

I love this quick and easy to make chocolate treats. I love that you added rice krispies to the recipe for that added crunch. Maybe I can also tweak the recipe and make different variations, replacing the rice crispies with toasted coconut, or crushed peanuts/almonds, etc. Thanks for sharing the recipe!
