Mushroom & Asparagus Quiche

A quiche is one of my favorite meals to make for lunch or an afternoon snack! It’s so easy to whisk together some eggs & some vegetables and then bake the whole thing for a delicious, wholesome meal! Since I’m a huge fan of Honey Bunches of Oats cereal, I decided to put a fun twist on my basic quiche recipe and use the cereal to form a sweet, crunchy crust on my quiche! This quiche had a wonderful balance of flavors! I love how the saltiness of bacon paired with the sweetness of the Honey Bunches of Oats cereal, and how the creaminess of the baked eggs paired with the earthiness of the sauteed vegetables!
As a child, I remember that my mom used make quiches for me often. I used to love all the different flavor profiles that she would create. And the best part of a quiche is that you can simply add whichever vegetables you have in your kitchen already- a quiche recipe is very forgiving! Add various veggies to the egg & milk mixture and then bake the whole thing for about 20 minutes. In no time, you have a super delicious, wholesome dish that the whole family will love! I would love a slice of quiche, paired with a salad, for lunch or dinner every day!

Mushroom & Asparagus Quiche
During a recent trip to Walmart, I picked up the cereal I needed for this quiche recipe: Honey Bunches of Oats Honey Roasted. This cereal is so delicious and features real honey and crunchy clusters! I also picked up Honey Bunches of Oats with Almonds, which features crispy almonds and real honey! I’m a huge fan of almonds so the flavor of this cereal suits me so well! Another cereal I picked up was the new Honey Bunches of Oats Gluten Free Chocolate. My husband is following a gluten-free diet so this cereal is perfect for him! Bring the whole family together and start your day off right with Post cereals as part of your morning routine! Although cereal is often enjoyed for breakfast, it’s really a great option for any time of day! Don’t forget that these Post cereals can be used for more than just cereal & milk for breakfast. Incorporate these cereals into your recipes – sweet & savory – for a fun twist on an original! Here’s how my Mushroom & Asparagus Quiche came together!
- 1 cup Honey Bunches of Oats Honey Roasted
- 3 tbsp. butter
- 6 eggs
- 3/4 cup milk
- 2/3 cup sauteed mushrooms
- 2/3 cup sauteed asparagus
- 1/3 cup cooked bacon, sliced
- salt & pepper, to taste
- 1. Preheat oven to 350 degrees F.
- 2. Combine the Honey Bunches of Oats Honey Roasted & the butter in a food processor until the mixture resembles wet sand.
- 3. Pack this mixture down in the bottom of a greased quiche pan.
- 4. Bake for 15 minutes. Let cool.
- 1. In a mixing bowl, combine the eggs and milk. Whisk to combine.
- 2. Add the bacon, asparagus and mushrooms to the egg mixture.
- 3. Pour this egg & vegetable mixture on top of the cooked crust. Bake for 20 minutes.
- 4. Let cool. Serve warm.
Whenever I’m making a quiche, I like to pour all my measured ingredients into small little bowls. It makes assembling the quiche such a breeze!
When combining the Honey Bunches of Oats Honey Roasted cereal and the butter in the food processor, make sure that the finished texture resembles fine crumbs.
When adding the cereal mixture to the quiche pan, use your hand to pack down the mixture into the pan. As it bakes, it will harden and darken. Best of all, it will form a nice, crunchy crust!
Add all the vegetables to the egg & milk mixture. Whisk together.
Then, I poured it into my greased quiche pan!
When it comes out of the oven, the filling will be set and firm! The edges will be darker and will pull away from the sides of the pan.
I cut a slice of the quiche and enjoyed a nice, big slice of this delicious quiche!
The sweet crunch of the crust pairs so well with the creamy texture of the egg mixture! The saltiness of the bacon is a perfect match for the earthiness of the sauteed vegetables. This quiche has such a lovely flavor profile!
Each bite is full of deliciousness!
This is a fabulous snack to have at any time of the day. I enjoyed a slice of this quiche, along with a salad, as a wholesome, delicious lunch.
