Easy Chocolate Peanut Butter Cookies
January 18, 2016 24 By EngineerMommyThere’s something really special about baking yummy treats and now that my daughters are getting a bit older, they really love accompanying me in the kitchen when I’m embarking on a baking mission! Just the other day, I wanted to make a batch of homemade cookies and since both of my daughters really love the flavor of peanut butter, I knew I wanted to incorporate that flavor into my cookies. And since chocolate makes anything better in my opinion, I decided to make a batch of Chocolate Peanut Butter Cookies! They were remarkably easy to make and the final result was such a delicious, moist cookie that I know we’ll be using this same recipe again soon! Baking is always fun, but it’s especially enjoyable when I use smart products that make baking easy! I recently got to try a few products from Culinary Corner and their 3 Piece Professional Kitchen Silicone Spatula Set is amazing!
First, here’s a sneak peek at the finished product!
Easy Chocolate Peanut Butter Cookies
Here’s the easy recipe!
- 3/4 cup flour
- 1/4 cup cocoa powder
- 1/2 tsp. baking soda
- 1/4 cup vegetable oil
- 1/4 cup sugar
- 1/3 cup peanut butter
- 1 egg
- 1/2 tsp. vanilla extract
- 2 tbsp. milk
- dash of salt
- 1. Preheat oven to 350 degrees F. Combine all dry ingredients in a mixing bowl.
- 2. Combine all wet ingredients in a separate mixing bowl.
- 3. Add the dry ingredients to the wet ingredients. Mix with a spatula to combine.
- 4. Place small balls of the batter onto a silicone baking mat.
- 5. Bake at 350 degrees F for 12 minutes.
I used one of the Culinary Corner Professional Kitchen Silicone Spatulas to mix the dry ingredients.
I love that this set comes with 3 different spatulas that are designed to help with everyday tasks:
- One large spatula with a spoon concave paddle that makes it easy to scoop foods like cake batter.
- One small spatula that’s perfect for detailed jobs like icing cakes. The rounded corner makes it so easy to scrape bowls.
- One medium spatula with a square corner for reaching into a blender.
When combining the wet ingredients with the dry ingredients, the spatula made easy work of mixing. I love that the paddles are a light blue color so that the spatulas look fabulous and can be displayed on kitchen counters. Another thing that really sets these spatulas apart from the competition is that the silicone paddles are removable for easy cleanup. There’s no more worrying about a buildup of food around the paddle base. Simply pop off the paddle and wash it thoroughly. And their flexible silicone paddles made it so easy to scrape the batter off the sides of the mixing bowl!
The spatulas were really comfortable to hold and I leave them in a container on my counter top (they’re so pretty!) The spatulas are able to withstand high heat (up to 450 degrees F) and extreme cold, so they’re suitable for any kitchen endeavor. Also, they’re dishwasher-safe and also stain & odor resistant. Next, I placed teaspoonfuls of the batter, rolled into balls, onto the Culinary Corner Non-stick Silicone Baking Mat.
I just placed my baking mat right on top of a cookie sheet. Look at how easily my cookies came right off this baking mat! And that is without any baking sprays whatsoever!
To spruce up my cookies further, I made a simple peanut butter icing. I used peanut butter and water to get the consistency of icing. I then drizzled it over my cooled Peanut Butter Chocolate Cookies!
This was such an easy, delicious recipe. And these cookies were a definite hit in this house! Each bite was rich and fudge-y and full of flavor!
