When it comes to busy mornings, one thing is certain. I always need a satisfying, delicious breakfast to start my day in the right way. So today, I’m excited to share with you a delicious breakfast recipe! This Decadent Breakfast Stack is made with the fluffiest blueberry pancakes ever. My secret to the extra fluffy texture? I add Vintage Seltzer to the batter! Keep reading for all the details.
Decadent Breakfast Stack with the Fluffiest Blueberry Pancakes
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 large egg, lightly beaten
- 1 cup Vintage Seltzer® Blueberry
- Vegetable oil for griddle
- 1 cup fresh blueberries
- 1/4 cup sugar
- 1/2 cup Vintage Seltzer® Blueberry
- 2 tsp cornstarch
- 1. Use a whisk to combine the flour, baking soda, egg, and Vintage Seltzer® Blueberry until smooth.
- 2. Heat a griddle over medium heat and brush with oil.
- 3. Place approximately 1/4-1/2 cup of the batter onto the hot griddle. Flip each pancake once bubbles form on the surface and the circumference starts to brown.
- 4. Keep warm until ready to eat!
- 1. Combine the water, sugar and blueberries in a small saucepan. Bring to a boil, stirring often.
- 2. Simmer for about 5 minutes.
- 3. Add the cornstarch to the mixture. Whisk vigorously until smooth.
- 4. Let syrup cool before serving.
I love adding Vintage Seltzer to my pancake batter! It really is the secret to the fluffiest pancakes ever! Vintage Seltzer® is actually free of sugar, sodium, fat, gluten, artificial sweeteners and high fructose corn syrup. It’s simply delicious!
Be sure to use a whisk to fully combine the batter. The mixture should be completely smooth and free of lumps.
Here’s a helpful tip! Use a squeeze bottle (like the condiment bottle shown below) to form perfectly round pancakes!
Cook the pancakes approximately 2 minutes on each side. Flip only after you see bubbles forming on the surface of the pancakes. The circumference of the pancakes should also start to brown.
The color to look for is a delicious golden brown! Aren’t these gorgeous? Yummy!
For the blueberry syrup, combine the syrup ingredients in a small saucepan over medium heat. Vigorously use the whisk to incorporate the blueberries.
After the mixture has boiled and the cornstarch has been added, the syrup will be thick & rich!

Now, it’s time to form our Decadent Breakfast Stack! Simply set up a little stacking station with the pancakes, the homemade blueberry syrup, some fresh blueberries & whipped cream! Start by topping one pancake with the whipped cream. Then, add the blueberry syrup and some fresh blueberries on top!
Add another pancake on top and keep adding layers until you’ve reach your desired height! This breakfast is the perfect way to start the day, don’t you think?

I have never thought to bake with seltzer before but I can see how those pancakes would be really light and fluffy. We don’t have that brand here in Canada so I am going to have to find someone who’s willing to grab some for me from the states!
