Now that my daughters are getting a bit older, they really love helping me around the house more than ever. Just the other day, my older daughter helped me sort the laundry and my younger daughter helped me wipe down the furniture. When it comes to preparing meals in the kitchen, both of my girls really love to get in on the fun – and I’m more than happy to encourage them! In fact, cooking together as a family is so much fun and is a fabulous learning opportunity for the kids. Today, I will be sharing the recipe for a delicious Coconut Almond Rice Pudding using Uncle Ben’s Ready Rice and I’ll show how my daughters really helped put this recipe together!

Coconut Almond Rice Pudding
During a recent trip to Walmart, I picked up both Uncle Ben’s Ready Rice (Original variety) and Uncle Ben’s Boil In Bag Rice (Brown Rice variety). Uncle Ben’s Ready Rice produces delicious, fluffy rice after only 90 seconds in the microwave. It’s so convenient and is a perfect option for busy weeknights. Uncle Ben’s Boil in Bag Rice comes with four 2-cup bags and produces flavorful rice after only 10 minutes on the stove top. It’s an ideal solution for everyday meals, snacks, etc.
Using Uncle Ben’s Ready Rice is quick and easy. Simply tear off the top of the package so that the product can vent inside the microwave.

I gathered the rest of my ingredients for the rice pudding: shredded coconut, slivered almonds, sugar, dried papaya and coconut milk.
Getting my daughters involved in food prep in the kitchen is one of my passions! My younger daughter, Charlotte, helped me by holding the mixing bowl while I poured in the cooked rice.
Next, she helped me add the coconut milk into the rice mixture. Are you cooking with your family? Ben’s Beginners is encouraging families to cook together, because it’s fun and educational! We had a lot of fun cooking together.
We added the sugar to the mixture next. Cooking is definitely a creative endeavor that encourages kids to learn new tasks and build their confidence.
Mixing is one of Charlotte’s favorite activities in the kitchen. Regardless of what I’m making in the kitchen, she always loves to help me mix everything together! I use the opportunity to teach her about the importance of creating a smooth, homogeneous rice pudding. Seeing my kids gain experience (and confidence) in the kitchen just makes me smile!
Next, we added some shredded coconut to the mixing bowl.
My older daughter, Sophia, then walked into the room and wanted to join in on the fun! She helped me add the slivered almonds and she mixed it all together. We couldn’t wait to try this rice pudding.
Once the mixture is smooth and even, it should look like this.
Next, I divided the mixture into three small dishes.
I topped each portion with a sprinkle of cinnamon (optional) and the diced dried papaya.
This recipe was so easy to make and tastes absolutely delicious. The tropical flavors of coconut and papaya make this the perfect after-school snack that’s sure to please everyone.
Each bite had the perfect balance of flavors: sweet rice, crunchy almonds, chewy papaya and more!

- 1 package Uncle Ben's Ready Rice Original
- 2/3 cup coconut milk
- 1/2 cup sugar
- 1/2 cup slivered almonds
- 1/3 cup shredded coconut
- 1/4 cup dried papaya, diced
- dash of cinnamon
- 1. Cook the Uncle Ben's Ready Rice, according to the package directions.
- 2. In a mixing bowl, combine the cooked rice, sugar, milk, almonds and coconut.
- 3. Divide the mixture into three small dishes.
- 4. Sprinkle with cinnamon and top with the diced papaya.

Oh my gosh what a great idea! I am lactose intolerant and never thought about changing up the milk to make this!! It is one of my favorite desserts I am SOOO going to try this!
