Eggnog Cupcakes with Eggnog Buttercream Frosting

The holiday season is full of memories for me. Growing up, Christmas was all about spending time with family and enjoying all the fun and festivities of the season! I remember driving around with my parents to see how all the neighbors decorated their homes for the holidays. The lights on some of those homes were spectacular! I remember getting together with my cousins at my aunt’s house to decorate Christmas cookies. We used to get so excited about adding icing and sprinkles onto our cookies! Another thing that is a constant during the holiday seasons is sharing delicious treats with friends and family. I remember my mom bringing delicious cookies & pies to the neighbors during the month of December. As my cousins and I have gotten older, we’ve gotten into the routine of exchanging delicious baked goods with each other for Christmas! This year, I’m so excited to share with them (and you!) my delicious Eggnog Cupcakes topped with Whipped Eggnog Buttercream Frosting! And to present these cupcakes to my cousins, I placed one cupcake in a Rubbermaid TakeAlongs container, which I decorated to look like a Winter Village scene! It is a fun little project and I’m totally excited about how it all came together!

Eggnog Cupcakes with Eggnog Buttercream Frosting
Cute, right? Did you notice how the outside of the Rubbermaid TakeAlongs container was decorated to look like a Christmas Village scene. I’m sharing the tutorial (and free printable) for that below, but first, here’s the recipe for both the cupcakes & the frosting!
- 1.25 cups all-purpose flour
- 3/4 cup sugar
- 1/4 tsp. nutmeg
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- dash salt
- 1/2 cup butter
- 2 eggs
- 2/3 cup eggnog
- 1 cup sugar
- 1/4 cup all-purpose flour
- 1 cup eggnog
- 1 cup butter
- dash salt
- 1. Preheat oven to 350°F. Line muffin cups with paper baking cups.
- 2. Combine all cupcake ingredients except butter, eggs and eggnog. Add this flour mixture to the butter in a large bowl.
- 3. Add the eggs & eggnog and beat until smooth & silky. Divide into the muffin cups.
- 4. Bake for about 25 minutes. Remove from oven and let cool.
- 1. Stir together the flour and sugar in a saucepan. Beat in the eggnog until no lumps remain.
- 2. Heat mixture over the fire until it comes to a low boil. Turn off heat and let eggnog mixture cool.
- 3. In a medium bowl, beat butter & salt until it's creamy. Add in cooled eggnog mixture, stirring until it comes together.
Whenever I’m making a recipe, I always find it helpful to measure out my ingredients and leave them in little cups so that putting everything together is quick & easy!
To fill up the baking cups with the mixture, I often like to use an ice cream scoop. It makes it super easy to dole out the portions, keep the levels even and minimize drips!
When preparing the eggnog buttercream frosting, it’s important to keep whisking the ingredients constantly on the stove. Once the mixture comes to a low boil, turn off the heat and let the mixture cool.
To prepare the candied pecans, I simply added a spoonful of butter, along with a sprinkle of cinnamon and sugar, to some pecans in a pan. Let the nuts toast and let the sugar mixture thicken and caramelize. Once caramelized, take the nuts off the fire and let cool.
When the cupcakes came out of the oven, they were a lovely golden brown and had a wonderful fragrance of eggnog. Here are the rest of the ingredients for topping the cupcakes, including the eggnog buttercream frosting, the candied pecans and some caramel syrup. I put the frosting in a small plastic zippered bag, sealed it up and then snipped off a corner of the bag with the scissors. This makes applying the frosting to the cupcakes a breeze!
Here is what one cupcake looked like after adding the frosting! Delicious, right?!
It really doesn’t need anything else per se, but of course, I added a bit more deliciousness on top. I drizzled some of the caramel syrup and placed a few of the candied pecans on top!
These cupcakes were a big hit in this house. Everyone clamored for them- they are that delicious!
Although I could have eaten them all by myself, I didn’t make them just to gobble every last one myself. I actually made this batch of eggnog cupcakes to give to my cousins! After all, that’s what the holiday season is all about! During a recent trip to Walmart, I picked up a few of these fabulous containers: the Rubbermaid TakeAlongs Deep Squares and Rubbermaid TakeAlongs Rectangles. They are perfect for storing, serving and gifting food during the holiday season! I love these containers because their spill-proof design makes them perfect for bringing food to a friend or neighbor during the holidays. These containers are also microwave, freezer, and dishwasher safe, so they’re practical and convenient for everyday use, too! For my cupcakes, I decided to use one of the Rubbermaid TakeAlongs Deep Squares because they’re the perfect size for a cupcake! To decorate the side of this container, all I needed was a few basic supplies!
Supplies:
Rubbermaid TakeAlongs Deep Square
white & blue construction paper
various Christmas-themed stickers (trees, snowflakes, etc.)
Christmas Village Printable
craft glue
Directions:
1. First, cut out the blue paper to cover the top half of the side of the container. Cut out the white paper to cover the bottom half of the container, creating a little “hill” by cutting a curve in the white paper.
2. Print out my Christmas Village PDF file, cut out the various elements, and attach them to the container using some craft glue.
3. Add some stickers to the scene. I added some snowflake stickers and a glittery Christmas tree sticker.
Done! Easy peasy!
Once my container was fully decorated, I popped one of my eggnog cupcakes inside. This makes such a fun and festive gift for anyone! I love giving my cousins a Gift Of Thanks for always being there for me throughout the years!
