{RECIPE} shrimp & beans tahini pita sandwich
July 1, 2014This recipe of Shrimp & Beans Tahini Pita Sandwich was the result of trying to put together a meal one night and using up what we had in the pantry at the time. The two kids and the hubby completely fell in love with this recipe! If my two picky eaters liked this one, I know it must be a winner!
The real piece de resistance of this recipe is the tahini sauce. It’s made from tahini (or sesame paste) and lemon juice, garlic and salt. The tahini sauce is so versatile and makes anything taste more decadent. You can use the tahini sauce to flavor chicken, eggs, veggies, steak, fish,… anything really! Let’s get to the recipe.
{RECIPE} shrimp & beans tahini pita sandwich
Pita Sandwich Ingredients:
- 2 pita breads
- 1/2 cup cannellini beans
- 1/2 cup spinach, sautéed in oil
- 1/2 cup shrimp, steamed and cooled
- 1/4 tsp. cinnamon
- salt & pepper, to taste
Tahini Sauce Ingredients:
- 2 tbsp. tahini butter (look for this in the aisle with the peanut butter)
- 2 tbsp. water
- 2 tbsp. lemon juice
- 1 garlic cloves
Steps:
- To make the sauce, throw all tahini sauce ingredients into a blender and blend until smooth.
- Assemble your sandwich as follows. Place a warmed pita bread on the plate. You can warm the pita by placing it on a pan over medium heat.
- Top with the spinach.
- In a separate pan, sauté the beans in the olive oil and add the salt, pepper and cinnamon. Place the cooked beans on top of the spinach.
- Add the shrimp and pour the tahini sauce over the top. Serve warm!
