Cherry almond cake {healthy recipe}
August 8, 2014This cherry almond cake is a healthy dessert treat that looks beautiful. The bright red cherries and the perfect slivers of almond top this luscious (yet low-fat) cake. This is a wonderful cake recipe to try this Summer.
I used a jar of maraschino cherries, because I love the extra sweetness factor, but you could certainly use fresh cherries. Of course you will have to pit them before you chop them and add them to the cake. Also almond slivers are perfect for a cake recipe, as they are thinner and smaller than whole almonds and won’t be too overwhelming if someone bites into the almond.
I love the way this recipe came together and will be making it many more times this Summer, I’m sure!
Cherry almond cake {healthy recipe}
Ingredients:
- 1 cup flour
- 1 tsp. baking powder
- 1/8 tsp. salt
- 1/2 cup sugar
- 3 tbsp. butter, melted
- 3 tbsp. fat-free yogurt
- 1 egg
- 1/4 cup skim milk
- 1/2 cup chopped maraschino cherries
- 3 tbsp. juice from jar of maraschino cherries
- 2 tbsp. slivered almonds
Directions:
- Preheat oven to 350 degrees F.
- Combine first four ingredients.
- Combine next four ingredients in a separate bowl.
- Combine the wet and dry ingredients making sure they are well mixed.
- Set aside a small amount of the cherries and almonds to top the cake at the end. Add the remaining ingredients to the batter and fold together.
- Pour batter into greased cake pan and place in oven for 50 minutes.
- When done, sprinkle the cherries & almonds that were set aside on top. Let cool.
