This recipe for Asian slaw with Thai peanut dressing is guaranteed to delight your tastebuds! It’s full of flavor and crunch and well, basically it’s everything a good slaw should be!
I was eating at a local Thai place the other week and had to select a side dish to go with my entrée. As I was perusing the side dish options, I decided to try the Asian Slaw. It’s not something I usually go for (no idea why) and I was feeling a bit adventurous. Well, let me just tell you that it was sooo delicious. So crunchy, salty, sweet, spicy- amazing flavor!
I came home and knew I had to try to recreate that recipe for Asian slaw with Thai peanut dressing. I even made some improvisations based on what I had in my pantry that day. Let’s get to the recipe!
{Recipe} Asian slaw with Thai peanut dressing
Slaw Ingredients:
- 1 cabbage, shredded thinly (I used a mandolin for nice, thin, even cuts!)
- 1/2 small onion, sliced thinly
- 4 stalks celery, sliced thinly
- 1/2 cup dried cranberries (optional)
Dressing Ingredients:
- 2 tbsp. creamy peanut butter
- 1 tsp. soy sauce
- 1 tbsp. thai chili vinegar
- 1 tbsp. rice vinegar
- 1/2 tsp. garlic powder
- 1/4 tsp. crushed red pepper flakes (more if you like it extra-spicy)
- handful of peanuts (optional)
Directions:
- Add cabbage, onion and celery to a large bowl.
- For the dressing, add all ingredients to a small mason jar, seal tightly and shake well. You could also whisk them together in a small bowl.
- Pour dressing over the slaw ingredients. Toss well.
- Optional: Top with cranberries and/or peanuts for added textural intrigue.
Trust me, even if you’re not typically a slaw person, you really should try this recipe. You might just LOVE it!
