My husband and I have been married for 8.5 years and we’ve been together for about 15 years (we were high school sweethearts). When it comes to basic relationship advice, one thing I’ve learned over the years is the importance of setting aside time on a regular basis to go for walks, enjoy lunch together, play board games, and find simple ways to connect with each other. We recently had a lovely Backyard Lunch together… just the two us while the kids were in school! To make the occasion more festive, I made delicious Spicy Mango Micheladas using Clamato Original flavor. This easy & delicious drink was perfect for our little lunch date! I also made some Cheese Stick Skewers (using cheese sticks from the Walmart Deli- so convenient) and I can’t wait to share all the details with you.
My husband’s schedule is very unpredictable. Some days he works an early shift and is home at 3pm (love those days!) Other days he works a late shift and doesn’t get home until 10pm. Since I work from home, my schedule is very flexible, but my schedule also parallels the kids’ school schedule. That’s why it can sometimes be hard to set up a lunch date with my husband. However, on the days that he works a late shift, he’s usually home until 1pm, so we can definitely take some time and have lunch together. Sometimes we’ll go out to our fave restaurant, but my favorite lunches are the ones we make & enjoy together at home.
To celebrate our special lunch date, I decided to make some Micheladas. Never heard of Micheladas? These authentic Mexican drinks are typically made with beer, lime juice, and assorted sauces, spices, and peppers. They’re served in a chilled, rimmed glass. There are many variations of this popular drink, but my favorite is this Spicy Mango Michelada I’ll share with you today!
Spicy Mango Michelada Drink
I started by gathering my ingredients for the Micheladas, including a light beer, ground ginger, chili powder, mango, and more. For the full recipe details, scroll down and look for a printable recipe card. As the base of my Michelada, I used Clamato (I found this 64 oz bottle in the Walmart juice aisle), because its delicious tomato-based flavor is the quintessential ingredient for Micheladas. This delicious, refreshing and spicy beverage will be ideal for celebrating a special lunch date with my husband.
First, I combined the the Clamato and beer in a large jar.
Next I added the spices, lime juice & hot sauce and stirred to combine.
Now let’s dress up those glasses. I added some lime juice to a small bowl and poured some chili powder onto a small saucer. First I dipped the rims of the glasses into the lime juice and then dipped them into the chili powder.
Don’t the glasses look so fun & festive now?
To assemble the drinks, place a few spoonfuls of the chopped mangoes in the bottom of the glasses. Next, carefully pour the Michelada mixture into the glasses, being careful not to disturb the chili powder-covered rims. The bright, sweet flavor of the mango pairs so well with the spiciness of the chili powder. These drinks look so fancy, but amazingly, they were so easy to prepare using Clamato! Did you know that National Michelada Day is on July 12? Celebrate special events by serving Micheladas throughout this summer!
To have a nice snack to go with our Micheladas, I decided to make Cheese Stick Skewers. I picked up these mozzarella cheese sticks from the Walmart Deli. I also gathered some black olives, cherry tomatoes and salami from Walmart.
I started by chopping the mozzarella cheese sticks into bite-sized pieces.
Then it was time to assemble the skewers. I grabbed some wooden skewers and added the ingredients onto the skewers. The tomatoes and olives were threaded right onto the skewers. For the salami slices, I rolled them first and then threaded them onto the skewers.
Is it just me or do skewers make everything so much more fun? Putting some delicious food on skewers is a fabulous way to celebrate special occasions with your special someone!
I brought everything outside and set up a little table for me and my husband.
It was great to catch up and chat. We reminisced about our long history together (like how excited we were when we first found out I was expecting or how much fun it was to purchase our first home together). We’ve been together throughout college (and grad school), even though we went to schools that were a hundred miles apart.
It’s so important to take the time to re-connect on a regular basis. Kids, house, bills, etc. all get in the way of making time for each other. However, it’s so important to set aside time to focus on our relationship. The Michelada was the perfect accompaniment to our special lunch date and definitely made the occasion feel more festive.
