Marinated Flank Steak Taco Salad

For me, summer is all about spending a lot of time outdoors. Whether we’re hosting a big backyard BBQ for the whole family or simply spending a relaxing afternoon grilling outdoors, we love being out in the open air. Today, I am sharing one of my favorite summer-inspired recipes with you! This Marinated Flank Steak Taco Salad is a delicious combination of flavors & textures! Made with the authentic flavors of HERDEZ® Salsa Verde, this salad is sure to satisfy the whole family!

Marinated Flank Steak Taco Salad
The first step is to form a little taco bowl. You can find these taco bowls pre-shaped at the store or you can make your own! Simply place a tortilla on the underside of a muffin tray and bake it for 10 minutes at 350 degrees F.
Let it cool completely. After it cools, remove it from the muffin tray and admire your work! It now holds its bowl shape!
Next, it’s time to marinate the steak! I used a simple marinade of HERDEZ® Salsa Verde, olive oil, lemon juice and some minced garlic. Simple & flavorful!
We love to grill outside during the warmer months. My husband really enjoys getting out there and grilling everything from steak to chicken to veggies and more!
While the steak was cooking, the girls and I love to play in the yard. My older daughter absolutely loves to draw shapes on the sidewalk with chalk. Here she is making some of her favorite shapes: hearts!
She also loves to blow bubbles and then chase them! Of course, wearing her unicorn helmet makes everything more fun around here! 🙂
Before we knew it, the steak was all done. Check out how gorgeous this flank steak is looking after just a short time on the grill.
*Tip: After the steak is cooked, let it sit for at least 10 minutes before cutting it. When you do cut it, slice it across the grain to create pieces that are deliciously tender!
Now that the steak is cooked, it’s time to assemble the taco salad! First, gather the ingredients: chopped lettuce, black olives, scallions, shredded cheese, sliced steak and HERDEZ® Salsa Verde.
Start by filling the taco bowl with the lettuce and scallions.
Next, add the steak slices and black olives.
Finally, add the shredded cheese and HERDEZ® Salsa Verde. I love the fresh and delicious taste of HERDEZ® Salsa!

- 2 tbsp. HERDEZ® Salsa Verde
- 1 tbsp. olive oil
- 1 tbsp. lemon juice
- 3 garlic cloves, minced
- 1 taco bowl
- 2 tbsp. HERDEZ® Salsa Verde
- 1/2 cup marinated flank steak, cooked & sliced
- 1 cup lettuce, chopped
- 2 tbsp. scallions, sliced
- 1/3 cup black olives
- 1/4 cup shredded cheese
- 1. Combine all ingredients in a shallow bowl.
- 2. Place on top of the flank steak. Let sit for at least 30 minutes.
- 1. Grill the marinated flank steak until cooked. Let sit for at least 10 minutes and then slice against the grain.
- 2. Fill the taco bowl with the lettuce and scallions.
- 3. Top with the olives and steak.
- 4. Finally, add the shredded cheese and HERDEZ® Salsa Verde. Enjoy!

I made something similar, only I used dumpling wrappers, so they were mini taco salad bowls, actually, they were more like bite-size. The salsa verde looks like the perfect addition to this dish. Thanks for sharing the recipe!
