3 Time-Saving Breakfast Recipes

As a mom & entrepreneur that’s always on the move, mornings are a very busy time of day! That’s why I like to rely on easy-to-prepare breakfast solutions that satisfy the whole family. Today I will share with you three easy breakfast ideas using my new Vitamix blender: Cinnamon Chia Almond Butter, Strawberry Spinach Smoothie Bowl, and Maple Cinnamon Almond Milk Frappuccino.
Cinnamon Chia Almond Butter
Homemade almond butter is a real treat. It’s not only nutritious & easy to make (thanks to the 2HP motor of the Vitamix), but it’s also pure goodness with no added preservatives or flavorings. To get started, I like to roast about 2 cups of almonds in a 300 degree oven for 15 minutes. Even if you purchase roasted almonds at the store, pop them into the oven for 10 minutes- it will warm them throughout, get them softer & make their oils easier to extract.
Next add the almonds to the Vitamix container along with 3 tbsp melted coconut oil (or another oil of your choice). I love that the Vitamix E310 Explorian Series Blender features a large 48 oz container so it’s perfect for blending medium batches of food for the entire family.
Start up your Vitamix on Level 1 and work your way up to Level 6-7. With ten variable speeds, it’s easy to fine-tune every texture with precision… all the way from the smoothest purees to the thickest salsas. There’s even a pulse feature to create a fancy coarse chop over a smooth purée. This is food prep at its finest – you’re only limited by your imagination!
After about 30-45 seconds of blending, you will have to use the tamper to push the almond mixture down into the blades. It’s at this point that I also add some extra flavorings to the container: chia seeds (for extra crunch), cinnamon (for subtle spine) and raw honey (for added sweetness). After all, you can find almond butter at the store, but you certainly won’t be able to find it with your favorite flavorings… and definitely not for the low price-per-serving that you can achieve when you make it at home.
Once done, the mixture will be smooth & perfect. With a powerful 2 HP motor, this Vitamix blender can handle even the toughest ingredients and still create the smoothest blends.
This almond butter is absolutely perfect on some toast with a side of sliced strawberries for breakfast.
The almond butter can be stored in an air-tight container in the fridge for up to 5 days.
Strawberry Spinach Smoothie Bowl
A smoothie (or smoothie bowl) is always a smart, time-saving choice for breakfast. I love that it’s easy to combine a wide variety of wholesome ingredients and create a nutritious, delicious breakfast. For this smoothie bowl, I combined 1 cup almond milk, 1/2 cup frozen strawberries, 1 cup spinach, 2 tbsp chia seeds & 1 tbsp honey into the Vitamix container.
I love that I don’t need to chop up the fruits/veggies into small pieces. I also don’t have to defrost the frozen fruit. I can just throw everything in there and the Vitamix can easily handle it all. Talk about convenience!
Check out how smooth the mixture is after a quick whiz around the machine.
I pour the mixture into a bowl and top with shredded coconut, slivered almonds, chia seeds & cacao nibs. Breakfast is served!
Maple Cinnamon Almond Milk Frappuccino

I have made nut butters before and they are delicious. Smoothies is something my daughter does during the summer for her gang at breakfast.
