When it comes to busy weekday mornings, one thing is certain: I need breakfast solutions that are quick, easy and delicious. Now that both of my daughters attend full-day school most days of the week, mornings can definitely get a little hectic around here. From getting everyone out of the house on time to quelling that sibling argument at 7 in the morning, breakfast needs to be convenient and totally delicious. That’s why I’m loving these Mini Veggie & Cheddar Quiches. Made with the delicious goodness of Borden® Cheese, these quiches are quick and easy to prepare.
Mini Veggie & Cheddar Quiches
One thing that I love about these quiches is that you can make a big batch of them on the weekend and store them in the fridge throughout the week. In the mornings, simply pop one or two of these babies in the microwave for a few minutes and breakfast is served. These scrumptious quiches are definitely an everyday breakfast solution for us. Breakfast is indeed better with Borden® Cheese!
The convenience of these quiches cannot be beat! In fact, Borden® Cheese helps me and my family take a few extra minutes in the morning to cherish those special everyday moments… you know, like tickling my 3 year old in bed until she giggles or telling my 5 year old an interesting story about rainbow unicorns and glitter clouds! The thought of glitter clouds puts a smile on my face, too! 🙂
Despite the hustle and bustle of busy weekday mornings, I try to take some time and enjoy those family moments that are filled with love … the same kind of love that goes into Borden® Cheese! To make these quiches, first gather the ingredients: Borden® Cheese Mild Cheddar Chunk, eggs, milk, mushrooms, zucchini and scallions. P.S. I also picked up Borden® Cheese Sharp Cheddar Slices from the supermarket because they are a delicious cheese brand with high-quality and wholesome ingredients, and I know they’ll be perfect in my daughters’ school lunches.
Start by dicing the mushrooms, zucchini, scallions and Borden® Cheese Mild Cheddar Chunk.
Add all the ingredients to a large mixing bowl.
Whisk to combine fully.
Lightly grease a mini muffin tray with non-stick spray. Pour the egg mixture into each muffin space, leaving some room at the top for expansion.
Place the muffin tray in a 350 degree oven for 30 minutes. Let cool for 10 minutes.
After the quiches have cooled off a bit, pop each one out. They should come out fairly easily. If one feels like it’s a bit stuck, use a spoon to release the edges of the quiche from the tray.
I love the ooey-gooey cheesy texture of these mini quiches!
These quiches were so easy to prepare and make a delicious, nutritious breakfast any day of the week. With the cheesiness of these quiches, getting out of bed at the crack of dawn is not so hard!
In fact, I decided to make a big batch of these babies on the weekend. Now I’m prepared for all those busy weekday mornings! Who couldn’t use a quick breakfast solution on weekdays? Am I right, moms?! 😉

Those would definitely be a hit in my house. I think it’s always a good idea to make things into single servings, too – less waste.
I make something very similar. Wonder thing about these are there are so many different combinations. Fresh veggies or for meat lovers bacon and sausage.
I like that it comes in small portions so you can easily eat only what you can. It also looks easy to prepare and looks really delicious.

I think I need to try making quiche again. The last time I made some was when I was in high school trying to get a passing grade for my cooking class. I am not a big egg eater but will try it. They look really good.Yum, cheese. I will definitely try.
