Green Smoothie Breakfast Bowl

As a mom of two young kids, mornings can definitely be busy around here! However, I always like to make sure I have a wholesome, nutritious breakfast to start my day. And since diabetes runs in my family, I’m well aware of the lifestyle challenges of managing diabetes. That’s why I try to focus on healthy lifestyle habits and keeping my recipes lower in carbs. Today, I’m so excited to share with you the delicious recipe for a Green Smoothie Breakfast Bowl filled with the goodness of spinach, almond milk, Greek yogurt and fresh fruits! Since mornings can be hectic, I try to keep breakfast simple. I like to enjoy a Smoothie Breakfast Bowl almost every day of the week. It’s easy to prepare, totally nutritious and very tasty! I always try to gather & measure my ingredients first. It helps me make sure I have everything I need. After all, if you find that you are out of peaches, you can always substitute with another fruit! Smoothies are very forgiving! I love that about them!
I then placed all my ingredients into a high-powered food processor.
And I pulsed them until smooth throughout.
Here comes my favorite part: decorating the bowl! I poured the smoothie into a bowl and added some extra toppings: chia seeds, slivered almonds, blueberries and peach wedges.
The flavor profile of this smoothie bowl is delicious. I love the combination of the fresh spinach, sweet fruit, crunchy chia seeds and nutty almonds. This smoothie has a lovely balance of textures!
When it comes to helping me stay full longer, however, nothing compares to the Glucerna® Hunger Smart™ Shakes. - 1 cup unsweetened almond milk
- 1/2 cup nonfat Greek yogurt
- 2 tbsp. chia seeds
- 1.5 cups fresh spinach
- 4-6 peach wedges
- 1/3 cup blueberries
- 1 tbsp. slivered almonds, for garnish
- 1. Set aside a small amount of peach wedges, blueberries, slivered almonds and chia seeds for garnish.
- 2. Add the remaining ingredients into a high-powered blender and process until smooth.
- 3. Pour into a bowl and top with the garnish ingredients.

That sounds really good. I definitely want to make more of an effort to start eating better and this sounds like a great way to do it.
My mother was diabetic and LOVED Glucerna. Since it’s formulated for diabetics I didn’t have to worry about her sugar intake much. She would have loved this breakfast bowl. I’m not all into greens 🙂

I’m always trying to find something that is more nutritious for me. I’m in the process of trying to get myself healthy are both physically mentally in nutritionally. I have to see if I can find these drinks at my store.
