Butterscotch Muffins w/ Caramel Glaze: Recipe & Clean-up

These light & fluffy Butterscotch Muffins with a Sticky Brown Sugar Caramel Glaze are the perfect way to indulge in a sweet moment any day of the week! Although baking these muffins created a huge, sticky mess on my pots & pans, the mess was no match for Scotch-BriteĀ® Scrubbing Dish Cloths. While we’re talking about the kitchen, I’m also sharing how to easily & quickly personalize some adorable flour sack towels with a fabric marker.
Let’s start with the personalized towels. Here are the supplies I used:

stencils
ruler
Directions:
1. Figure out where on the towel you would like to place your design. I placed the stencil on the flour sack towel and used the fabric marker to make my design.
2. Remove the stencil and add more designs, if you’d like. For this chevron stencil, I made one set of marks going in one direction and then I made another set going in the opposite direction.
I love a blue nautical theme, so I decided to use this stencil of a sailboat that I had. I simply placed the stencil down and used the fabric marker to make the design. It’s not about perfection. It’s about having fun! I love the way this one came out!
The last one I made was this compass design using the same set of nautical stencils. I wanted to add a bit more visual interest to this towel so I used a ruler to simply make some straight lines with my fabric marker.
Here is the set of three towels that I made. I really love the way they look. Using the fabric marker makes these towels durable for use in the kitchen. Even after washing & drying them, they will still look great!
THey add a beautiful nautical touch to my kitchen!
Now, let’s get right to the recipe for the butterscotch muffins!
- 2 oz butter
- 1/4 cup vegetable oil
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1 egg
- 1.5 cups flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 cup milk
- 1 tsp. vanilla extract
- 3/4 cup butterscotch chips
- 3 oz butter
- 2 tsp. milk
- 1/2 cup brown sugar
- 1/2 cup butterscotch chips
- 1. Preheat the oven to 350 degrees F. Combine all the dry ingredients in a medium mixing bowl.
- 2. Combine the wet ingredients in a separate mixing bowl. Whisk together to make the mixture smooth.
- 3. Add the dry ingredients to the wet ingredients slowly and whisk to combine.
- 4. Add a few tbsp. of the batter to a greased muffin tray. Bake for 25 minutes.
- 5. Remove from oven and let cool.
- 1. Combine the ingredients in a small saucepan over medium heat.
- 2. Whisk together to combine. Bring to a boil.
- 3. Drizzle over the cooled muffins. Top with butterscotch chips.
After combining the dry and wet ingredients, be sure to mix thoroughly so that the batter is free of lumps.
Place a few tablespoons of the batter in each section of a muffin tray.
After they come out of the oven, let them cool for ~20 minutes before topping them with the caramel glaze.
Bring the caramel glaze to a boil on the stovetop.
Drizzle the caramel glaze on top of the muffins and enjoy!
