There’s something about a vegetable quiche that just makes my heart sing. It’s easy to prepare, it’s filled with delicious ingredients and it’s such a gorgeous meal! The veggies baked inside an egg & milk mixture make this a colorful & totally eye-catching dish. Today’s recipe is for a crustless quiche that’s filled with all the goodness of a veggie garden: zucchini, onions, cheese and more. To make cleaning a breeze, I used the Scotch-Brite® Heavy Duty Scrub Dots Sponge, which scrubs away messes really quickly, leaving all my dishes spotlessly clean!
Preparing delicious meals for my family has always been a passion of mine. Seeing everyone’s face light up as they taste my meal really makes all those marathon kitchen sessions worthwhile. However, today’s recipe is a super quick one. It only takes about 15 minutes of prep and about 30 minutes of cook time. Talk about convenience! This is perfect for the busy school year, when we are always on-the-go and need to put meals & snacks on the table quickly.

Garden Vegetable Quiche
Gather the ingredients for this recipe: eggs, green onion, cherry tomatoes, shredded cheddar cheese, zucchini, pesto sauce and milk. For the full recipe details, please scroll down to the printable recipe card.
Make sure all veggies are cut into bite-sized pieces. I sliced the zucchini, cherry tomatoes and green onions.
Combine all ingredients inside a large mixing bowl. Whisk together to combine.
Pour into a greased quiche dish.
Place inside a 350 degree oven for about 25-30 minutes, or until fully cooked throughout. Breakfast is served, my friends! In fact, a slice of this crustless quiche can be served for breakfast, lunch, dinner or an anytime-of-day snack. I have even refrigerated slices of this quiche and reheated them in the microwave the next day.

- 6 eggs

I love a good quiche and they’re so easy to make. I usually use my ramekins to make them so everyone can have their favorite ingredients. I actually have that Scotch Brite dishwand. Just fill it up with dish soap and quick n’ easy removal of all those baked on residue. I’ve yet to try their sponges but I may have to give them a try.
I’ve never tried quiche. Looks yummy. I am a huge Scotch-Brite user and agree. They work great on tough, baked on food.
I wash by hand too so I’ll have to check this out. I like that it’s gentle but cleans really well.
I have never attempted to make a quiche. They have always look good to me but for some reason I thought they were hard to make. Obviously I was wrong and I definitely will try it.

Quiche are one of ,y favorite things to make. They can be a light lunch or brunch, or you can make them heartier and serve them with bread for dinner.
What a yummy looking quiche. I’ve never made a crustless quiche before. I’m not a huge fan of eggs, so I need the extra carbs to cut the taste 😉
