Grilled Vegetable Quesadillas {healthy!}

This recipe for Grilled Vegetable Quesadillas is so tasty and so healthy, you’ll want to make it all the time. It only takes about 20 minutes to whip this up, but once it’s ready to eat, it won’t last that long (trust me!) :)

It’s a fun food for the little ones, too. My daughters love eating quesadillas, because they love holding the tortillas and dipping them in sour cream or salsa. It makes eating food fun! And if it’s fun, they’re more likely to eat their dinner!

I like it too, because it’s much healthier than traditional quesadillas that are laden in cheese and oil and fat. These are lean- stuffed with grilled vegetables! And they taste fabulous, too!

Ingredients:
2 tortillas
3 zucchini, sliced lengthwise
1 cup baby bella mushrooms, sliced
1 medium onion, sliced
2 tbsp. fat-free refried beans
2 tbsp. cilantro, chopped
1/2 cup fat-free sour cream (for dipping)
1/2 cup salsa (for dipping)

Directions:
1. Over medium heat, grill the zucchini.

2. Grill the mushrooms.

3. Grill the onions.

4. Place the tortillas on the grill for a few minutes until they get some color and start to harden a bit.

5. Smear some refried beans on one tortilla.

6. Place the zucchini, mushrooms and onion on top of the beans.

7. Top with some cilantro.

8. Place the other tortilla on top, and cut into 4 quarters. Serve with sour cream and salsa.
