Healthy, low-fat chocolate applesauce muffins

October 3, 2012 0 By EngineerMommy

Craving chocolate but want to avoid the high saturated fat in most baked goods? Then this recipe is for you! I originally found the inspiration for this recipe here, but have adapted it a little to suit my tastes. These chocolate muffins use rolled oats as a base, so they are packed with heart-healthy fiber. Plus, instead of the usual oil or butter, these muffins use plain applesauce for moisture. This means that these muffins are pretty guilt-free… well, at least as guilt-free as muffins can be!

Check the recipe out and try these babies tonight!

Healthy, low-fat chocolate muffins

  • 1 cup rolled oats
  • 1 cup skim milk
  • 1 cup all-purpose flour
  • 1/2 cup sweetener (use artificial sweetener or raw sugar)
  • 3/4 cup plain applesauce
  • 1 egg white
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 7 tbsp cocoa powder
  • pinch salt
  1. Preheat the oven to 375 degrees F.
  2. Spray muffin pan with nonstick spray.
  3. Combine the wet ingredients together in one bowl and combine the dry ingredients together in another bowl.
  4. Add wet ingredients to dry ingredients and mix until combined.
  5. Spoon mixture into muffin sections.
  6. Bake for 30-35 minutes, until a toothpick inserted into the middle comes out clean.
