Last week, I made Greek souvlaki sandwiches and I needed a Greek-inspired side dish to go along with it. I decided to try to make Greek-flavored potato rounds. They are truly delicious- crispy & soft at the same time.
Here is my recipe for making Greek baked potato rounds.
- 2 potatoes, sliced
- olive oil, 2 tbsp
- lemon juice, 1 tbsp
- 1 tsp dried oregano
- 1 tbsp dried thyme
- salt & pepper, to taste
- Preheat oven to 475 degrees F.
- Place potato slices on silicone baking sheet (for easier removal later on) and toss with olive oil.
- Toss with remaining ingredients and bake for about 40 minutes, until the edges are crispy and the centers are tender. Be sure to flip the potatoes halfway through cooking time.
