Greek oven-baked potato rounds

Last week, I made Greek souvlaki sandwiches and I needed a Greek-inspired side dish to go along with it. I decided to try to make Greek-flavored potato rounds. They are truly delicious- crispy & soft at the same time.

Here is my recipe for making Greek baked potato rounds.

  • 2 potatoes, sliced
  • olive oil, 2 tbsp
  • lemon juice, 1 tbsp
  • 1 tsp dried oregano
  • 1 tbsp dried thyme
  • salt & pepper, to taste
  1. Preheat oven to 475 degrees F.
  2. Place potato slices on silicone baking sheet (for easier removal later on) and toss with olive oil.
  3. Toss with remaining ingredients and bake for about 40 minutes, until the edges are crispy and the centers are tender. Be sure to flip the potatoes halfway through cooking time.
